2. Rojos, azules, naranjas, amarillos, verdes, púrpuras.
Anaime es color. Está presente en las fachadas de sus
casas. En los camperos que van de una vereda a otra
cargados de gentes y de frutos. En esa colcha de retazos
que son sus variados cultivos. En los muros y postes
pintados que invitan a cuidar la tierra y a los animales
en vías de extinción. En su pequeña pero bien cuidada
plaza de toros. En las garzas que todos los días van a
pernoctar en sus árboles. En los uniformes de ese colegio
que se da el lujo de tener un puente y un río cristalino
dentro sus instalaciones. Sí, Anaime es puro color. Y aire
frío y limpio. Y agricultores de vocación. Y mujeres con
convicción. Y jóvenes con decisión.
Anaime es un pueblo tranquilo, con poco tráfico,
silencioso. Casi todo lo contrario a Cajamarca –en
edad su hermano menor–, en constante movimiento,
atiborrado de vehículos, bulloso. Están separados por
siete kilómetros de una vía pavimentada que bordea el
río Anaime.
Con cerca de 20 mil habitantes, desde la esquina del
Café Roma –en un costado del parque–, el más antiguo
del municipio, calmando el frío con un tinto hecho
en greca italiana, puede sentirse a Cajamarca pasar:
sus tractomulas, que son parte del paisaje, llenas de
contenedores hacia la capital, Bogotá, y al puerto de
Buenaventura; sus empresas propias, como una de café y
otra de frituras de arracacha y plátano; sus cooperativas
de transportadores, de agricultores, de lecheros; su canal
de televisión, sus emisoras, sus profesores, sus talentos
musicales y deportivos, sus expertos labriegos.
En lengua quechua, Cajamarca significa “región fría”,
pero esa definición es climática, por sus 19 grados
centígrados de temperatura promedio. En todo lo demás,
los cajamarcunos se destacan por su calidez, por esa
pasión por subsistir, por trabajar, por progresar, por el
bien estar.

sumamos a los planes de las autoridades locales y regionales para
impulsar iniciativas de interés de la comunidad. Trabajamos juntos
para superar los problemas y dificultades. Compartimos los sueños, los
proyectos, las esperanzas. Somos parte de la comunidad y crecemos
juntos.
A septiembre de 2010, hemos invertido en Cajamarca más de seis
mil millones de pesos, tanto en compras ($ 3.453.135.974) como en
proyectos y programas de desarrollo social, educación ambiental e
información ($ 2.606.000.000). Hemos creado 500 empleos directos
y 2.000 indirectos, y trabajamos con 150 proveedores locales y
regionales.

a domingo. Siempre de cinco a seis de la tarde. Son treinta, sesenta, más de cien, es casi imposible
contarlas. Tan rápido como lo permiten sus alas, van acomodándose en las ramas de esos árboles que
durante el día son verdes y al atardecer son blancos, el color de sus plumas. Para los del pueblo, ya
son parte del paisaje, para los extranjeros su aparición es una novedad. No se sabe de dónde vienen y
cuál es su destino en las madrugadas, pero sí es claro que vuelan kilómetros sobre las cordilleras, para
llegar hasta allí. A las garzas les gusta dormir en Anaime, ese pueblo que, como canta su himno, es un

La región fría Desde muy temprano, con la marcha de las garzas, Anaime comienza
a cobrar vida. Llegan los estudiantes a pie o amontonados en esos
vehículos a los que llaman “La línea”. Los cafés ya tienen el tinto
caliente. El párroco, Luis Fernando Medina, abre las puertas de su
hermosa casa cural, se prepara para la misa en esa iglesia blanca y

Anaime es un pueblo tranquilo, con poco tráfico, silencioso. Casi todo

llevan 46 años de diferencia. Inicialmente Cajamarca fue corregimiento
y Anaime fue municipio. Pero, cosas de la vida, entre ellas el paso de la
Carretera Nacional, llevó a que el más pequeño se creciera, se volviera
grande, importante y municipio. Anaime pasó a ser corregimiento.
Están separados por siete kilómetros de una vía pavimentada que
bordea el río Anaime. La aparición de los cementerios, ambos de
muchas sepulturas y pocas bóvedas, anuncian la salida y la entrada,
o viceversa, de ambos pueblos. Al llegar a Cajamarca lo que más se
destaca es el cerro de la Virgen –un pequeño mirador desde el que se
ve toda la meseta– y la imponente iglesia, construida gracias al empuje
de monseñor Hernando Rojas, entre 1952 y 1961, consagrada a San
Miguel Arcángel. A diferencia de la de Anaime, sobria por dentro, este
templo, orgullo de los cajamarcunos, sorprende por las franjas rosadas
y azules, que le dan un cierto ambiente festivo, de alegría, a su interior.
Afuera, el único parque del pueblo. Amplio y poco habitado, es obra
de William Clark, un extranjero que hizo el trazado general. A su
lado está la vía Panamericana. Cientos de tractomulas, de vehículos,
pasan a diario por ahí y le dan una sensación de eterno movimiento.

34. In Cajamarca mule driving is still
a vital activity for its economy

colorful place. Colors are everywhere: in the front step of its houses,
in the many jeeps that travel from one village to another loaded with
people and fruits. All this, mixed into that quilt of colors of the many
plantations all around. On the walls, murals, and light posts painted
with many invitations to take care of the soil and the animals on the
verge of extinction. It is also present in its small but treasured bullring.
Present in its herons; herons that pass the night in its many trees. It is
also present in the uniforms of children of the local school, that holds
the privilege to have its very own bridge and crystal clear water stream
within the facilities. Yes, Anaime is a colorful place. And it is cold and
fresh air. As it is also farmers who were born to work the land. And
women with conviction. And youngsters with power of decision.
Early in the morning, while the herons leave town, Anaime comes
to live. The students begin to arrive on foot, or in a crowded vehicle,
known locally as La Línea or The Line. The local cafés have hot pots of
coffee ready to be served. The priest Luis Fernando Medina opens the
doors to his beautiful priest’s house, prepares himself for mass service
at that white modern church – devoted to Saint Joseph, the carpenter–
which he is very proud of, and gets ready also to teach Religion class
to the children of the school. The morning at Anaime runs smoothly,
within its normal routines.
At noon, the students go to the park to chat, to play, while they wait
for the jeep that will take them back to their county, to their home and
homework, to take care of the agriculture chores as well. Seven of them:

Fahrenheit in average. In every other way, the Cajamarcunos are
warm people; they stand out for their drive to survive, to work, to
progress, to have well being.

suelen aprovechar sus caudales para lavar las cargas de arracachas que en mula les van bajando
de los campos. En el acuerdo verbal de compra-venta entre sembrador y comerciante se establecen
puntos de entrega específicos sobre las vías. Luego, los vehículos se dirigen a ellos para recoger las
cargas. Los coteros son los responsables de bajarlas de los lomos y embarcarlas en los camiones.
Esta vez el único que aprovecha el torrente es Arlex Quiroga. La cosecha completa apenas viene en
camino. Mientras tanto, él enjuaga una muestra significativa para que el comprador pueda verificar
la piel lisa y limpia del tubérculo. En perfecta sincronía de movimientos, Arlex alza, baja, sacude,
levanta y apiña, uno a uno, los 22 bultos que sirven de evidencia. Las vacas a su alrededor parecen

natural flow of the stream to wash the sacks of arracacha (a garden root vegetable originally from the
Andes, somewhat intermediate between carrot and celery) being brought to them by mule, down to the
stream banks. In the verbal sale agreement between farmers and merchants, shipping points on the
roads are established. Then, the trucks come to collect the sacks. The coteros are in charge of taking
the sacks off of the mules and piling them up into the trucks
that transport their loads to different destinations. On this
particular occasion, the only person who takes advantage
of the opportunity to use the current of the stream is Arlex
Quiroga. While the whole harvest is still on its way to the
bank, he washes a large amount of the produce and ensures
that the vegetable has a clean and soft skin. In a perfect

un pequeño caño por el que corre agua caliente. Como si fuera un
sauna natural, vaporoso de azufre, este lugar tiene un encanto más
que adicional: los muñecos, especies de estalagmitas, conos de agua
mineralizada, que al brotar, con el pasar de los siglos, se convirtieron
en columnas que en este caso tienen extrañas formas de vírgenes, de
alienígenas, de seres deformes.
Para completar el viaje están también el baño en la piscina termal,
que a pesar de lo rústica tiene el atractivo del agua, y el disfrutar de
un completo almuerzo, que hace la esposa de Rigoberto. Él sabe que le

Cerca del Parque Nacional Natural de los Nevados, desde sus faldas,
puede verse en días azulados, el del Tolima y sus nieves ya no tan

alrededor. A quien no esté informado le parecerá imposible creer que
esos retazos de cultivos, ese caserío a sus pies llamado Toche, esas
casas campesinas, esas aguas termales, ese pueblo cajamarcuno que lo
adoptó como suyo –el volcán está en jurisdicción de Ibagué–, estén a
merced de lo que decida el viejo Machín, de su calma o de su cólera.

gris ceniciento que exhala el Machín.
El área total de los suelos cajamarcunos es de 516,2
kilómetros cuadrados, de los cuales el 99,8% es
zona rural. Explayados horizontal y verticalmente,
estos suelos ofrecen a sus habitantes tres niveles
diferentes, desde los cañones de los ríos, a 1.500
msnm, hasta las cumbres de sus cerros, a 3.800. De
ellos, solo el 23% se destina a producción agrícola.
Típicos habitantes de este inmenso sistema de
montaña llamado Los Andes, los cajamarcunos han
usado las diferentes alturas a su favor. Por ello, no es la extensión del área cultivada la fuente de su riqueza y variedad,
sino la integración vertical y el uso simultáneo de los distintos pisos térmicos.
El empleo masivo de químicos y las pocas innovaciones tecnológicas han conducido a una pérdida gradual de la
capacidad. Pese a que la frontera agrícola se ha ampliado en los últimos años, en un 10,3%, las toneladas anuales
de alimentos se han reducido en un 4,2%. Campesinos, comerciantes y líderes gremiales y políticos están atentos
y pensando estrategias. Como bien lo explica Raúl Parra, ingeniero agrónomo y gerente de la cooperativa lechera,
la solución es simple. Un paquete tecnológico que incluya el uso de semillas certificadas, que no requieran tantos
químicos, y asistencia técnica con crédito estatal. Voluntad es lo que se requiere, y no cae del cielo.
59. From Heaven to Earth. foR thousAnds of yEARs now, ashes expulsed from

hydrographic basins, gave origin to a fertile land of overwhelming beauty. Covered with infinite green shades, furred by
fruits and vegetables, animals and forests, sometimes, once in a while, the soil allows the people to see its core: all grey

The total area of the lands of Cajamarca is three hundred and twenty square miles and 99.8 percent of them are
acknowledged as rural zone. This territory – spread across and down – offers three different levels to its inhabitants:
from the canyons of the rivers, 4.921 twenty-one feet above sea level, to the top of its mountains at 12.467 feet above
sea level. Of these rural lands, only 23 percent is
meant to agriculture. The cajamarcunos, classic
inhabitants of this enormous system called the
Andean Mountains, have used the different levels
for their own benefit and profit. Thus, the origin
of the richness and variety of this territory is not
the extension of cultivated land, but the vertical
integration and simultaneous use of all the
thermal floors.
The massive use of chemicals and the few
technological innovations have led to a gradual
loss in the capacity to produce better vegetables
and fruits. In spite of having extended the
agricultural border during the most recent years
by 10,3 percent, the annual tons of food have
decreased about 4,2 percent. Farm workers,
traders, union workers, and political leaders
are paying attention to this phenomenon,
thus pondering upon innovative and effective
strategies. As Raul Parra - agriculturist and
manager of the local milk coop – explains it, the
possible solution is very simple: a technological
pack including the use of certified seeds
samples, which does not require the use of many
chemicals, and technical assistance with credit
loans coming from the government. What is
needed is willpower – and it certainly does not fall
from Heaven.
60. Grano por grano

EllAs no suElEn PintARsE lAs uñAs. Es una pérdida de
tiempo. Esa parte de sus dedos es la que más sufre en el trajín diario
de su oficio. Las tienen cortas, roídas por la madera. Y para evitar que
se deterioren más, se las forran con cinta de enmascarar. También
hay hombres, pero son muchas más las mujeres, diez, veinte, treinta,
que todos los días se reúnen a expurgar fríjol, a separar los granos
buenos de los malos, en una esquina de Cajamarca, cerca de las
grandes bodegas del que es el primer municipio frijolero del Tolima.
A la par con las tractomulas que están ahí cargando y descargando,
con los coteros que vienen y van con los bultos en sus hombros y
espaldas, un sonido menudo, reiterativo, como de lluvia cuando cae
granizo, predomina en el ambiente. Es el ruido que hacen los granos
buenos al caer de la mesa por un hueco, al costal, a los costales, que
luego bien sellados irán a las plazas mayoristas de Ibagué, Bogotá,
Cali y Medellín.
Cada mesa de madera tiene dos orificios a lado y lado. Por parejas,
cuatro seleccionadores de fríjol son los encargados de buscar,
minuciosa pero rápidamente, los granos viejos, carcomidos, sucios,
para separarlos de los que están perfectos, con sus tonos rojos,
púrpuras y brillantes. Rocío, Luzmila, Johanna y Eider están en
una de ellas, no por casualidad sino porque, según estadísticas de
quienes los contratan, seleccionan al mismo ritmo un promedio
de doce bultos por día. Sus manos se mueven con agilidad, en
coordinación con sus ojos, que detectan a vuelo de pájaro los que
están malos. Poco conversan, no quieren entretenerse con nada.
61. Gracias al proyecto Cajamarca y Anaime Libre de
Brucelosis y Tuberculosis, alrededor de 285 familias
ganaderas de los valles del departamento de Tolima
podrán vender mejor sus productos.
Saben que mientras más bultos expurguen, mejor es la paga al final
de la semana.
Luzmila lleva dos años en el oficio. Su esposo es agricultor y quien
lleva las riendas del hogar, pero ella, con lo que hace ahí, aporta un
dinero extra que sirve especialmente para la educación de sus hijos
y sus gastos personales. Su secreto para ser buena seleccionadora,
dice, es hacerlo con seriedad, con responsabilidad, y eso implica
tener buen ojo, que la rapidez no signifique una deficiente
clasificación. Y es mejor hacerlo un poco menos veloz, que dejar
caer en el costal un grano malo. Cuando terminan cada bulto, un
bodeguero, encargado de la supervisión, mete la mano o una pequeña
pala, saca un puñado de fríjol y si encuentra mugre o algunos granos
que no debieron pasar, tiene la autoridad para devolver el bulto a la
mesa… y otra vez a volver a comenzar.
El “fríjol cajamarcuno” está mezclado con el que viene de otras
regiones, como Cabrera (Cundinamarca), Pitalito (Huila) y Rovira,
Playa Rica, Anzoátegui y Santa Isabel (Tolima). Recorren muchos
kilómetros para llegar a Cajamarca. Una de las razones para hacerlo
es que se aplica un estricto control de calidad y no sale una sola
carga sin antes comprobar, grano a grano, que el comprador y el
consumidor van encontrar un producto bien escogido, libre de
impurezas. De lo cuidadosas que sean las seleccionadoras no sólo
depende su sustento, sino una buena parte de la imagen que el
municipio ostenta como productor del grano más limpio y de mejor
sabor de la región y sus alrededores.

quE En El PAís de 44 millones de habitantes, se consumen cuatro kilos de fríjol al
año por persona. La producción nacional no da abasto y se debe importar de Ecuador,
Perú y Bolivia. El precio del fríjol se establece, entonces, no de acuerdo con los costos de
producción sino con los de importación. Además de ser uno de los cultivos que mayor
inversión inicial requieren, en el fríjol se pagan los jornales más caros de todo el sector
agrícola local.
Dos clases de grano produce Cajamarca: el
voluble, que crece colgado, y el arbustibo, que
nace precisamente de un arbusto. El lote o tajo
se debe preparar enterrando palos gruesos
de madera a lo largo de los surcos, para luego
conectarlos entre sí con alambres, todo instalado
con firmeza para aguantar el peso del fríjol
maduro. Si se cae uno, el entable se va al suelo,
como fichas de dominó. A lo largo de los cinco
o siete meses que demora el crecimiento, el
sembrador debe guiarlo para que se enrede
correctamente a lo largo de una hilaza. El producto
final sale en siete variedades, reconocidas como
de gran calidad. La clave, en todo caso, no está
tanto en las técnicas de siembra y cosecha, sino
en la selección posterior, grano a grano.
Con estos datos en mente vive Jairo Ramos,
líder del gremio. En una libreta de bolsillo
va desgranando el plan para aumentar la
productividad, diseñado con el apoyo de la
Alcaldía de Cajamarca, la Gobernación y la
Cámara de Comercio de Tolima, la Federación Nacional de Cultivadores de Cereales y
Leguminosas y AngloGold Ashanti. En lo comercial, buscan desarrollar una estrategia
de mercadeo que incluya registro de la marca Fríjol Cajamarca, adopción de código de
barras y acceso directo a mayoristas y minoristas. En lo tecnológico, apuntan a capacitar
a los cultivadores en planeación y manejo de plagas, pero, sobre todo, en la utilización
de semillas en vez del fríjol mismo, para evitar enfermedades y los costos asociados a su
tratamiento. Por último, piensan en crear un organismo de asociación para enfrentar a
los intermediarios y posicionarse en el mercado. El plazo es tres años, en el cual estarán
acompañados financiera y tecnológicamente durante los dos primeros; luego, dice don
Jairo, ya estarán listos para crecer solos.
65. Beans Bet. stAtistics REvEAl that of forty four million Colombians, there is
an average consumption rate of eight pounds of beans per capita every year. National production
of beans in Colombia is much lower; they have to be imported from Ecuador, Peru, and Bolivia.
Then, the price of beans is established according to the cost of importation and not to the cost of
production. In addition to this, beans cultivation requires one of the highest initial investments, and
day laborers are the best paid amongst all the agricultural sector in the region.
Cajamarca produces two kinds of grains: vine
grains, which grow by creeping and climbing
along a surface, and a second type, which are
grains that are the product of a bush. The plot or
tajo has to be set out by burying thick wooden
sticks along the furrows. Then, the sticks have
to be connected by using wires to form a net.
Everything must be firmly installed to stand the
weight of ripened beans. If one of the sticks falls
down, the complete net will come down too like
domino pieces. During the five or seven months
that it takes for the bean plant to grow, the farmer
has to guide it to make sure it creeps and climbs
properly along the thread. The final product has
seven varieties, all of them with a very high
quality. The key for the harvest to be successful
is not the sowing and harvest techniques, but the
subsequent selection, grain by grain.
Jairo Ramos is the leader of the Union of Bean
Plantation Farmers, and has all the former data
in his mind. In a pocket notebook, he offers the
necessary details that will take the plan into
increasing the production rates, a project designed by the Union, with the support of the City Hall,
the Governor’s Office, the Chamber of Commerce of Tolima, the National Federation of Cereal and
Leguminous Farmers, and Anglogold Ashanti Colombia. In the business field, they are trying to
develop a merchandising strategy that includes the registration of the trademark Fríjol Cajamarca,
the adoption of the bar code, and a direct access to retailers and wholesalers. In the technological
field, they are aiming towards the proper training of farmers in planning and plague control; yet the
most important thing is that they are trying to train farmers to use seeds instead of the bean itself to
avoid diseases and costs related to their treatment. They have three years to do this. During the first
two years, they will have financial and technologic support and then, they will be ready to continue
on their own, says Jairo.

Abelardo Matallana nació el 10 de julio de 1918, en Saboyá, aquel
municipio de Boyacá en el que le regalaron a Jorge Velosa, el cantante
carranguero, esa cucharita de hueso que luego se le perdió. Los sucesos
de su vida se le mezclan en la memoria, no recuerda las fechas pero
sí los hechos. Sabe que la noticia del asesinato, en Bogotá, de su
líder liberal, Jorge Eliécer Gaitán, le llegó cuando ya estaba viviendo
en Cajamarca, pueblo en el que se instaló, como muchos otros de
su departamento, huyéndole a la violencia política entre liberales y
conservadores.
Comenzó a poblar de Matallanas la tierra boyacense y tolimense,
cuando apenas tenía 16 años. Tuvo cuatro hermanos, pero es él quien
se ha encargado juiciosamente de multiplicar el apellido, al igual que
los panes y los peces de aquel conocido milagro. Sin que se tenga
la plena certeza –pueden ser más, no menos–, tiene 186 nietos, 50
bisnietos, algunos tataranietos, y de solo tres años una chorlita, que es
como se le dice a la sexta generación de una familia. Muchos viven en

descendencia porque su hermano Caín no lo permitió. Otro Abelardo
es aquel famoso monje que en plena Edad Media se enamoró de una
religiosa, Eloísa. Como castigo por ese amor prohibido, fue castrado y,
por supuesto, tampoco dio descendencia. Este Abelardo, el Matallana, el
boyacense de Cajamarca, la tuvo por ellos dos.
“Aquel que es un hijo fuerte” y “el gran trabajador” son los distintos
significados que tiene el nombre de Abelardo. Y a este viejo tronco
Matallana, tan recio, como el pino que le da sombra a su casa, sí que
le casan esas definiciones. Hace cinco años estuvo muy enfermo, y
aunque se recuperó, ya no ha podido volver a trabajar la tierra. Sin
embargo, ahí sigue, sin quitarse su sombrero, hablando, recordando,
resistiendo. Por algo dice la sabiduría popular que los árboles mueren
de pie.
