3. ORECCHIETTE WITH “CACIORICOTTA” Ingredients 400 gr of orecchiette pasta or small home made one 1 onion fresh cacioricotta (typical Apulian cheese, made of sheep’s milk) salt 500 gr of peeled tomatoes basil extra virgin olive oil
4. ORECCHIETTE WITH “CACIORICOTTA” Preparation Mince the onion and put it in a pan with olive - oil. When the onion becomes brown add the peleed tomatoes and some salt and let the sauce cook. Add some basil leaves. Cook the pasta in enough boiling water to which some salt has been added. As soon as the pasta has is cooked strain it and serve it with the sauce and strew cacioricotta cheese on it.
