Combine ingredients in a blender. In case a blender is not available, use pineapple
juice without the chunks.
Bake the ham half or whole.
30 minutes before ham has finished cooking, take it out by oven.
Score the top of the ham diagonally in a criss-cross manner 1/8 - inch deep using a
sharp knife.
Spoon mixture over ham, brushing to cover entire ham.

Combine ingredients in a blender. Bake ham half or whole.

1 tbsp. orange zest

Mango-Orange Glaze
Instruction

In a blender, mix together garlic, chutney, mustard, brown sugar, orange zest
and juice.
Process them until a smooth thick glaze is prepared.
Pour glaze over the ham and bake for 10-15 minutes until the ham is glazed.
Return ham to oven for final 30 minutes of cooking, basting frequently with
mixture.
Remove ham from oven and cover with foil loosely. Let sit for 10-15 minutes
before carving.

4. Hoisin-Honey Glazed Pork Chops
Ingredients

8 oz. jar mango chutney
2 tablespoons hoisin sauce
2 tablespoons honey
1 tablespoon soy sauce or tamari
1 tablespoon coconut oil divided

Ingredients for vegetables

1 head bok choy, each leaf cut in half, green and white parts separated
4 radishes, thinly sliced
3 carrots, thinly sliced on the diagonal
1/2 red onion, thinly sliced
1 clove garlic, minced
1 inch square ginger, minced (I keep some ginger in the freezer so it keeps well,
and also so it is easy to grate when I am ready to use it)
2 tablespoons rice wine vinegar
1 tablespoon soy sauce or tamari
1 tablespoon sesame oil
1 tablespoon honey
1 teaspoon hot chili sauce like sriracha

Hoisin-Honey Glazed Pork Chops
Instruction
1.

Combine the hoisin sauce, honey, and soy sauce and marinate the pork chops
in the mixture. Prepare the bok choy, radishes, carrots, onions, and garlic, set
aside. Place the ginger, rice wine vinegar, tamari, sesame oil, honey, and
sriracha in a small bowl and stir to combine.

Heat two pans over high heat, and put half of the coconut oil in each. In one
pan, cook the pork chops over high heat for 4 minutes on each side (for 3/4
inch thick, bone in pork chops).

3. In the second pan, add the white parts of the bok choy, carrots, onions, and
radishes and cook over high heat for 3 minutes. Add the garlic and cook until it
just starts to brown. Add the green parts of the bok choy and the ginger sauce,
and cook for 2 more minutes. Serve the chops over a bed of the cooked
vegetables.

South of the Border Tamale Pie
Ingredients
1.2 cups cubed ham
2.1 8-oz. can tomato sauce
3.1⁄2 cup bottled chunky salsa
4.1 16-oz. tube refrigerated polenta with Mexican peppers or polenta with wild
mushrooms
5.1 cup shredded Monterey Jack and pepper cheese
6.Nonstick cooking spray

5. South of the Border Tamale Pie
Instruction
Combine tomato sauce and salsa in a medium saucepan. Stir in ham; heat through.
Heat oven to 350 degrees F. Coat a 2-quart rectangular baking dish with nonstick
cooking spray. Cut tube of polenta into 8 slices. Arrange polenta slices in baking
dish. Spoon salsa mixture over polenta.
Bake, uncovered, for 25 minutes or until heated through. Sprinkle with shredded cheese.
Bake for 5 minutes more or until cheese is melted.
