2. Summer dishes

• In summer we prefer light dishes.
• Our diet becomes more varied with new potatoes, a lot of
fresh vegetables and fruit.
• The most typical dishes of the summer are stuffed peppers
and lecsó which is a thick vegetable ragout.
3. Lecso

We cannot make typical Hungarian lecsó without tomatoes,
peppers and onions rich in flavour. We can prepare it with
bacon, sausages, frankfurters, eggs, rice or even tarhonya
which is a Hungarian egg-based pasta grain.
4. Lecso – the basic recipe

•Heat the oil and fry the finely chopped onions till golden.
•Add pepper slices and simmer till the peppers get soft.
•Add tomato slices and simmer till you get some gravy.
•Season it with salt and simmer it till it’s ready.
You can fry bacon at the beginning or add sliced sausages or frankfurters.
In some versions we add rice, tarhonya or eggs at the end and simmer till it’s ready.

•Wash the peppers, cut out the core.
•Mix rice with minced meat, an egg,
salt, pepper and vegeta or some
herbs.
•Stuff the peppers with the mixture.
•Make some roux with lard and flour.
•Add some tomato sauce, water and some salt
to the roux and boil it in a pot.
•Put the peppers into the pot and cook them
for about an hour.
•Cook on low heat.
•Add sugar if necessary.

6. Fruit dishes

Thanks to the sunny weather, we have and eat a lot of
different fruits in summer (peaches, strawberries, apples,
apricots, melons, sour cherries, raspberries, red and black
currents etc.).
On hot summer days it is refreshing to have light dishes made
of fruit or vegetables.
7. Fruit soup

It is very easy to make some fruit soup.
-Boil any kind of fruit .
-Thicken it with the mixture of flour and sour
cream or simply cream.
-Add some sweetener (honey or sugar) if necessary.
-Serve it cold.

Sour cherry sauce with semolina is also very popular.
• Boil the sour cherries.
• Add sugar.
• Thicken the sauce with the mixture of flour and sour cream.
• Fry semolina, be careful not to burn it.
• Add water and let it grow.
• Serve it cold with boiled beef.
9. The Asparagus Festival in Öttömös

•Asparagus is one of the most important export
products of our region.
• Öttömös, a nearby village, is the centre of the
asparagus growing area in Hungary.
•The first asparagus festival was held in 1994.

11. Asparagus soup

•Wash the asparagus, chop their tips
and put them aside for later.
•Roughly chop the asparagus stalks.
•Fry chopped onions and garlic, until
soft and sweet, without colouring.
•Add the chopped vegetables, pour
some stock on them and simmer with
a lid on.

•Season the soup with nutmeg, salt and pepper.
•Remove from the heat and blitz with a hand-held
blender.
•Thicken with a mixture of flour and sour cream if
necessary.
•Stir in the asparagus tips, bring back to the boil and
simmer until it’s ready.

•Wash, chop and boil the asparagus.
•Boil the rice.
•Fry the finely chopped onions and garlic till
golden.
•Add the minced pork, season with salt,
pepper, caraway seeds and fry the mixture.
•In the end add some paprika.

•Spread a heatproof dish with butter.
•Put half of the asparagus at the bottom
of the dish.
•Put some rice on it, then a layer of
minced pork, and the other half of the
asparagus on top of it .
•Spread it with sour cream.
•Roast it in the oven at 180 C.

• Mix flour and melted butter, add ground
cheese and some salt.
•Knead the dough with a little cold water
and let it rest.
•Roll out the dough and put it into a
baking tin.
•Break eggs into a bowl, add some milk
and ground cheese.

•Season with nutmeg and salt.
•Clean and boil the asparagus. Let it
cool.
•Spread the egg, milk and cheese
mixture on the dough.
•Put the asparagus on top of the
mixture.
•Roast the tart in a preheated oven at
150-160 C.
17. The cake of Hungary

Every year on the 20th of August, which is a national
holiday in Hungary, the cake of Hungary is chosen by
experts. The first one was chosen in 2007.
These are master confectioners’ specialities made with typical
Hungarian ingredients.
We already have floating island cake, plum cake of Szatmár,
sour cherry cake of Pánd, plum dumpling cake, millet cake
with apricot of Kecskemét, poppy seed cake with apples of
Szabolcs, brittle cake with honey from Milota.
We have also chosen the diabetic version since 2012: apple
cake with gooseberry, layered apple cake with red current
mousse.
18. Fröccs - Spritzer

”Fröccs” or spritzer is a tall, chilled drink, usually made with white wine and
carbonated water.
It is very popular in Hungary. It has lots of different types.
They are distinguished by the proportion of wine and carbonated water
added.
Some examples:
•kisfröccs/small spritzer is made with 100 ml wine and 100 ml soda
•nagyfröccs/ large spritzer is made with 200 ml wine and 100 ml soda
•hosszúlépés / long step spritzer is made with 100 ml wine and 200 ml soda
•házmester / landlord spritzer is made with 300 ml wine and 200 ml soda
•viceházmester / vice landlord is made with 200 ml wine and 300 ml soda
