Pollo Campero
Overview
Pollo Campero, which translates to “Country
Chicken”, is a fried chicken concept that originated
in Guatemala. Pollo Campero serves over 75
million orders per year, and employs over 6,000
employees. In the U.S., Pollo Campero restaurants
are selling as much as $1 million monthly in food.
Pollo Campero made the decision to expand into
the U.S. market after selling 3 million “to go”
orders through Central American airport locations
to travelers who were delivering orders of Pollo
Campero fried chicken to their U.S.-based friends
and relatives craving a taste of home.
The restaurants operate as “Fast Casual”, very
much in between a McDonald’s and a Boston
Market. Customers will order at the front counter
and carry their trays to their table. Front line &
Drive Thru consists of Cashiers, expediters and
food handlers. The chicken, after being cooked is
kept on warmer ovens or high temperature
chicken displays. The chicken comes marinated
and fresh (never frozen). When ready to prepare,
it gets breaded in the kitchen area and then it’s
put to maturate in refrigerators for an hour.

Starfruit serves low fat smoothies, frozen treats
