Our Oven Roasted Tomatoes are consistent in quality and flavor with
“Tomato Confit,” a marketing term which top chefs in France,
New York, and California are using for tomatoes which have been
prepared in the same manner. The tomatoes are slow-roasted at low
temperature before being stored in oil. The effect is a concentrated
tomato flavor without any of the intense bitterness of fire-roasted
tomatoes. The product instantly upgrades the effect of any dish or
finished manufactured product.

5. Pre-production
Tomatoes are washed, sized & sorted, inspected for
quality, and machine sliced.
Our Quality Assurance department employs Food
Technicians and Agricultural Engineers to ensure receipt
of excellent raw material and to supervise and maintain
Good Manufacturing Processes (GMP) throughout the
production process .

6. Drying Method
Freshly cut tomatoes are carefully placed on trays and loaded on to
individual racks.
Tomatoes are transported to ovens and are slowly cooked for up to 36
hours until they reach the desired moisture level of 65-75% at which point
they are individually quick frozen (IQF) and packed.
In-house Food Engineers guarantee products are handled in a controlled
environment.
Quality checks ensure a sanitary atmosphere and consistent finished
product.
Production is BRC, ISO 22000 Certified and the product is Kosher Certified.
