classic elegance and contemporary design. The white brick faça-
de and the forged-iron windows blend harmoniously with the both
modern and simple interior, with strong lively colours and linear
and functional furniture. The inside halls of the hotel are decora-
ted with a number of art works by contemporary artists, trans-
forming it into an original art gallery. But the most attractive
place is undoubtedly the terrace on the top floor, from which you
can almost touch the Chiesa dei Quattro Coronati with you hand.
The view is not as breathtaking as from other more panoramic
terraces, but it is the location itself that is fascinating: decorated
with lemon trees and flowers, the roof garden looks like an pri-
vate and cozy place, separated from the urban chaos and with a
truly magical ambiance, especially during the spring “Jazz
Wednesdays”. Choice of food is limited, with a “petite carte” for
the main meals, and a bar offer at aperitif time, that has more
wines than cocktails: some twenty or so knowledgeably chosen
labels for wines by the glass, with honest markups. But only a
little dish of green olives and two small slices of bread with goat
cheese to go with drinks.

pleted, the hotel is immediately striking because of its contem-
porary and minimalist style. The setting is modern and luxurious,
with an extremely harmonious and elegant mix of colours and flo-
wers. The terrace and the inner garden are not to be missed. The
roof - garden has a view of St. Peter’s Cupola, and offers a bar
service in which, apart from “classics”, original cocktails based on
sake, vodka or rosé wine are mixed for you. If you want to treat
yourself to an excellent dinner, the indoor restaurant, I Sofà di
Via Giulia, will offer you a sophisticated menu with tasty and well-
balanced dishes: for example, we can suggest the excellent green
nettle raviolis stuffed with goat cheese and topped with goose
sauce, and an equally good slice of tuna with asparagus on a
cream of Castelluccio lentils. There are also four tasting menus
(one is vegetarian) for € 65 to € 75, wines not included. And as
the “pampering “ is not only gastronomic, why not enjoy the
beautiful spa? It is a complete wellness centre with a Roman
bath, sauna, Turkish bath and hydro-massage, plus a whole

F Cavalieri peerlessly dominates the whole city. From outside, the
rectangular and not very attractive building does not do justice to
what you will find inside: luxurious and elegant ambience in which
each little detail is perfectly attended to. There is not just one outside
area, though the terrace of La Pergola (the restaurant of famous Chef
Heinz Beck open only evenings) is certainly what comes to mind first
when thinking of this hotel. However, starting from the lowest level,
there are 15 hectares of park, with many maritime pines, cypress
trees, palm and olive trees, and no less than 3 heated swimming pools
(daily entrance fee is €45 weekdays, €75 weekends) as well as the ter-
race of the Tiepolo Lounge with its traditional English-style tea served
every afternoon with different combinations. Besides, the terrace of
the Uliveto restaurant spreads out right to the edge of one of the swim-
ming pools, and apart from the “à la carte” menu, you can have
Sunday brunch for €75 for adults, and €30 for children. But it is going
up to the 9th floor that you can literally feel you are in heaven: the
spectacular and incomparable view from up there is quite breathta-
king. There, your palate will be just as content as your eyes, thanks to
the German Chef’s cuisine. A perfect blend of flavours, with daring and
successful combinations (like the filet of veal marinated in yoghurt on
a bed of chickpea purée and milk-caramel sauce), and great mastery
of cooking techniques (ex.: the “caponata” mullet with mint and honey
bonbons, created on the spot with the liquid nitrogen technique). And
to end on a high note, there is the wellness centre, open every day
from 9 am to 9 pm, and in which you can book various types of treat-
ments starting from a minimum of €100, that includes access to the
relaxation area (sauna, Turkish bath and hydro-massage).
