SLOW FISH Silvio & Caterina  Here some recipes …   Potassolo anchovies Genova 2008-09
But?! Do you know the recipe of Mackerel?  The ingredients: 1 kilo and 200 grams of mackerel  olive oil, 1 clove of garlic, 1 fistful pine nut, salt, peppers, 1 bunch of wild fennel, half  a glass white wine. Just try, even you can do this recipe
zerro  The “zerro” is delicious, if you conserve it in “salamoia” ( a mix of water and salt)
  Palamita  The palamita is a very delicate blue fish, its flesh is white  the ingredients   three tomatoes for the sauce  olive oil 1 clove of fennel  1 white onion  1 glass white wine Pine nut, olives, marjoram and parsley .
  Pagello The ingredients  Olive oil, 2 lemons, Rosemary, parsley, salt and pepper
Sugarello 4 sugarelli 300 grams of pulp of tomato,  Olive oil, 4 cloves of garlic, Salt, pepper, half a glass white wine.
Garfish ( aguglia) 4 garfish  Olive oil, 1 clove of garlic crushed, Juice of 2 lemons, Parsley, Oregano, Half a glass of water
