To Whom It May Concern:
Dustin Salyer worked as one of our Food Service Interns for the Summer Season
of 2007. After a competitive application process, he was chosen as one of five interns,
out of over 30 applicants. He arrived at Camp Ronald McDonald at Eagle Lake full of
enthusiasm and qualifications for the position. Camp Ronald McDonald at Eagle Lake is
a residential summer camp that serves children with physical, emotional and
development disabilities. We have 10, 6 –day sessions that serve 80-120 campers each
week.
His basic duties encompassed the spectrum of food service management jobs
required to serve and meet all the dietary accommodations and restrictions for these
populations such as menu planning, procurement of inventory, fiscal management and
basic administrative duties. He worked diligently in maintaining Health Code
Specifications and Food Safety Standards. Logistically and technically he handled the job
with ease and exception. I worked closely with Dustin and watched him grow into the
position and all of its responsibilities.
Working at Camp Ronald McDonald at Eagle Lake provides undergraduate
students in dietetics a total experience in Food Service Management, leadership training
and character development; but more importantly it opens the world of dietetics, beyond
the classroom. Dustin was introduced to world of children with various emotional,
physical and developmental disabilities. He lived with his fellow interns and program staff
members in a very close setting. Dustin has wonderful communication skills and
exceptional intuition. He came to understand all the levels in which we as people can
affect one another and how the role of a dietitian is and can be multi-faceted. He had
several close relationships with campers and fellow staff members. He always had a
smile and his face and he never was afraid to get dirty. Dustin not only completed all of
his Food Service Internship requirements, he also participated in all of our evening
program activities such as talent shows, casino nights, campfires and carnivals.
I highly recommend Dustin for a leadership/supervisory role. I have watched him
develop a sense of style in motivating others to work. If you have any questions, please
