WNC’s cool months of spring and fall, but
they also grow year-round. Look for these
nutritious leaves in your school cafeteria, or
make this delicious recipe at home!
Salad Wraps
 1 whole wheat tortilla
 1/2 cup local spinach and local lettuce
 1/4 cup broccoli slaw
 1/4 cup grated carrots
 1 tablespoon balsamic vinegar
 2 tablespoons olive oil
 1 tablespoon maple syrup
 Salt, to taste
1. Rinse and dry spinach and lettuce.
2. Toss spinach, lettuce, broccoli slaw,
and carrots in a large bowl.
3. Mix the balsamic vinegar, olive oil,
maple syrup, and salt in a bowl and
pour over the salad. Mix to coat.
4. Wrap the salad in tortillas, slice the
tortillas into appropriate serving sizes
(halves or quarters).

Salad Wraps
 1 whole wheat tortilla
 1/2 cup local spinach and local lettuce
 1/4 cup broccoli slaw

Greens like spinach and lettuce thrive in
WNC’s cool months of spring and fall, but
they also grow year-round. Look for these
nutritious leaves in your school cafeteria, or
make this delicious recipe at home!
Salad Wraps
 1 whole wheat tortilla
 1/2 cup local spinach and local lettuce
 1/4 cup broccoli slaw
 1/4 cup grated carrots
 1 tablespoon balsamic vinegar
 2 tablespoons olive oil
 1 tablespoon maple syrup
 Salt, to taste
1. Rinse and dry spinach and lettuce.
2. Toss spinach, lettuce, broccoli slaw,
and carrots in a large bowl.
3. Mix the balsamic vinegar, olive oil,
maple syrup, and salt in a bowl and
pour over the salad. Mix to coat.
4. Wrap the salad in tortillas, slice the
tortillas into appropriate serving sizes
(halves or quarters).
