Tomato fits easily into
different cropping systems,
has high economic value and
fruits can be processed,
dried, canned and bottled.
Moreover, tomatoes
contribute to a healthy, well-
balanced diet primarily.
What are Tomatoes?
Tomato is classified as a vegetable.
However, botanically speaking, tomato is a
fruit of the tomato vine. Hence, tomato is
both a vegetable and a fruit.
Although tomatoes are fruits in a botanical
sense, they don't have the dessert quality
sweetness of other fruits.

• TOMATO : As an excellent source of the
strong antioxidant vitamin C and other
antioxidants. It can help combat the
formation of free radicals known to
cause cancer.
• High potassium intakes are also
associated with a reduced risk of stroke,
protection against loss of muscle mass,
preservation of bone mineral density
and reduction in the formation of
kidney stones.
• Niacin in tomatoes helps
to lower cholesterol
• Tomato is a good source
of fiber, which reduces
high cholesterol levels
and for maintaining
blood sugar levels.
Glutathione, another powerful antioxidant
• Glutathione has proven antioxidant properties that
helps eliminate free radicals, responsible for the
appearance of many illnesses.
• It is also a very appropriate element in the elimination
of the body toxins, especially heavy metals that
produce deterioration of the organisms by
accumulation.
• Tomato has been proved to help to eliminate lead
efficiency
• Tomato has the capacity to lower blood cholesterol, to
favor the good state of our liver or to prevent eczema.
Aphrodisiac properties and other
benefits of tomatoes
• Tomato is consider to be a good aphrodisiac
since it has been proved that eating fresh
tomatoes increase sexual desire.
• It can aid cuts, scratches, scars or wounds of
any type and to heal or lower inflammation.
• To prevent feet odor, you can apply a 20
minutes feet bath in in a couple of liter of
warm water in which a liter of tomato juice
has been added.

• With this, TCA is facing another
challenge of tapping interested
partners to engage in similar
endeavour on commercial scale
with the end of considering other
varieties with different traits to
meet growers and target markets
diversified demand that can be
adopted even in the village level
to further improve the level of
farmers’ household productivity.

leaders, Technology and
Livelihood Educators, private
growers, processors,
investors, among others from
the North Central Luzon were
gathered purposely to
organize a technical working
or facilitating group.
These efforts led to the formation of
the North Central Luzon Tomato
Stakeholders Association
(NOCELTSA) that serves as technical
working group to facilitate the
promotion of off season tomato
technologies and at the same time
help assist in serving the prevailing
and potential needs in the service
area
Through NOCELTSA, series of
Lakbay Aral was held to
explore different tomato
processing opportunities... The
NOCELTSA officers who
attended the Trainers’ Training
on Tomato Processing were
tapped for product
development and promotion
TOMATO JAM
Materials needed/Ingredients:
1 cup chopped tomatoes
¾ cup refined sugar
1 tbsp calamansi juice
Procedure:
Select sound ripe tomatoes
Wash and blanch for 2-3 minutes
Peel and remove the seeds
Cut into small portions and chop
finely
To every cup of chopped pulp, add
¾ cup sugar
Cook to jam consistency
Pour in sterilized bottles while
hot.
Remove air bubbles and seal.
SWEET TOMATO candy Ingredient 10kg tomato 3kg sugar wash

PROCEDURE -cut tomato cross wise, remove seeds, boil water
blanch tomato for 10mins,strain,put tomato in caserole add
sugar stir once in a while until cook for 30mins & dry it for 3days.
