Ingredients and method

1. Hot cross
buns

2. INGREDIENTS:
1 cup milk
2 Tbsp yeast
½ cup sugar
2 tsp. Salt
⅓ cup butter, melted and cooled
1 ½ tsp. cinnamon
½ tsp. Nutmeg
4 eggs
5 cup flour
1 ⅓ cup currants or raisins
1 egg white
GLAZE:
1 ⅓ cup confectioner’ s sugar
1 ½ tsp. Finely chopped lemon zest
½ tsp.lemon extract
1-2 Tbsp milk

3. Method:
1. In a small saucepan heat milk
to very warm, but not hot.

4. 2. Pour warm milk in a bowl and
sprinkle yeast over.

5. 3. Mix to dissolve and let sit for
5 minutes.

6. 4. Melt and cool butter.

7. 5. Stirring constantly add sugar.

8. 6. Add salt.

9. 7. Add butter.

10. 8. Add cinnamon.

11. 9. Add nutmeg.

12. 10. Finally add eggs.

13. 11. Gradually mix with flour, dough
will be wet and sticky.

14. 12. Continue kneading until smooth
about 5 minutes.

15. 13. Cover and let the dough rest for
30 – 45 minutes.

16. 14. Add currants.

17. 15. Mix until dough will be fairly wet
and sticky.

18. 16. Let rise overnight in the
refrigerator.

19. 17. Let dough sit at room
temperature for about a half hour.

20. 18. Line a large baking pan with
parchment paper.

21. 19. Divide dough into 24 equal
pieces.

22. 20. Let rise in a warm about 1,5
hour, pre – heat oven to 400ºF.

23. 21.Hot cross buns are ready.

24. 22. Serve warm, if possible, with
sugar.
