SNACK 1
Deviled Eggs With Bacon
Ingredients
2 eggs
1 slice of bacon
1 teaspoon of mustard and 1 teaspoon of cumin
Cooking Method
Fry the bacon in a pan with a little olive oil until crispy, allow to cool and crumble the bacon
into small bits
Hard boil 2 eggs and allow to cool.
Get a small bowl and scrape out the yokes, add the bacon bits, and then add the mustard,
cumin and a little mayonnaise. Mix together and then put the mixture back into the egg
whites. Add salt and pepper to taste and garnish with paprika.

4. PALEO SNACKS
SNACK 2
Natural Fruit Roll - Ups
Ingredients
2 cups of fresh fruit (Berries, apples, pears etc..pick what you like)
1 cup of water
1 teaspoon of lemon juice and 1 teaspoon of cinnamon
Cooking Method
Chop up the fruit until it fills two cups and then place in a saucepan and add the water. Bring this to
a simmer for between 12-15 minutes. Stir and then mash the mixture and add 1 teaspoon of
lemon juice and 1 teaspoon of cinnamon.
Simmer for another 10 minutes until the mixture thickens. Place the mixture in a blender and blend
until smooth.
Put parchment paper on a baking tray and spread the mixture until it is about one quarter of an inch
thick. Place in an oven at 140 F and the mixture will be ready when it no longer feels sticky.
Cut into equal sizes and store in an air tight container for a great tasting snack.

5. PALEO SNACKS
SNACK 3
Herb Crackers
Ingredients
2 cups of almond flour
2 tablespoons of your favorite herbs (Sage, rosemary, etc)
2 tablespoons of water
1 tablespoon of olive oil
1 egg white
Cooking Method
Put the flour and spices in a bowl and add a pinch of salt. In a separate bowl place the water, the
egg white and the olive oil and whisk together.
Add the whisked contents to the flour and spices and mix until you form a dough
Roll out the dough to about 1/8 of an inch thick and then cut into small squares.
Place in a pre-heated oven at 350 F and bake for 10 minutes.
Turn off the oven and allow to bake for another 10 minutes or until golden

7. MY BACKGROUND
Hi, my name is Carol Manse and I am a full-time dietican and
fitness instructor. I have a great partner and two wonderful
