T o t a l t i m e depends on how the beans are cooked a n d w h a t beans y o u use.
Ingredients:
1 lb d r i e d pinto beans
6 strips b a c o n , chopped
2 cloves g a r l i c , chopped
4 m e d i u m fresh p l u m tomatoes, chopped
2 m e d i u m onions, chopped
1 m e d i u m green p e p p e r s , chopped
1 (12 ounce) c a n b e e r ) c h e f s choice
b u n c h fresh c i l a n t r o , chopped
1 c a n of beef or c h i c k e n broth
Y o u c a n a d d i f y o u like it spicy. ( I D O N O T ! )
2 j a l a p e n o peppers, seeded a n d chopped
salt a n d p e p p e r to taste
Directions:
1. Rinse a n d p i c k over beans.
2. B r i n g the beans to a b o i l i n a large p o t o f w a t e r a n d c o o k over m e d i u m eat
f o r 1 Yi to 2 h o u r s u n t i l they are t e n d e r b u t s t i l l f i r m . ( I b o i l f o r 1 h o u r a n d
let t h e m sit over n i g h t . )
3. Before the beans are a d d e d , f r y the bacon i n a large s k i l l e t u n t i l h a l f w a y
cooked
4. A d d g a r l i c , tomatoes, onions, a n d green pepper, c o n t i n u e c o o k i n g w i t h bacon
u n t i l the bacon is c r i s p .
5. A d d a can o f beer t o bacon m i x t u r e a n d s i m m e r a few a d d i t i o n a l m i n u t e s , o r
l o n g e r i f y o u l i k e y o u r beans softer.

2. Charro Bean Soup

3 Strips of Bacon cut into 1” pieces
1 Onion, chopped
1 Green Pepper, chopped
2 Garlic cloves, chopped or mashed
1 Can of diced Tomatoes
1 Can of Pink Beans

1 Bottle of Beer
1 Tbsp Cilantro, chopped
Salt & Pepper to taste
In large pot, fry bacon halfway to release the fat. Add onion and
peppers and garlic, sauté until all is cooked through.
Add can of diced tomatoes and cook again.
Add bottle (or can) of beer. Bring back to a boil, then lower heat
and let simmer about 15 minutes.
Add cilantro just before serving. ENJOY !!
*Another common term for pink beans is chili beans. These pinkish brown
beans have a sweet meaty texture to them. Available dried or canned. Found
in the local grocery store where other types of beans may be found.
