Goals – long term plans for achieving
something specific
Targets – short term, precise actions to
accomplish goals
3. GOAL & TARGET SETTING
Think of goals as a final destination, if
you do not know your destination,
how do you know where your going?
Think of targets as the road travelled to get to
your final destination.
4. Goals & Targets should always be SMART
S – SPECIFIC – to your area and under your control
M – MEASURABLE – in units of time or number
completed
A – ACHEIVABLE - doable in a reasonable time
frame
R – RELEVANT – related to the long term goal
T – TIMELY – can be completed in a set time
period
5. GOAL & TARGET SETTING
When setting goals use verbs -
increasing, decreasing.
Show movement - what dial
are we trying to move.
6. Example of TEAM Goal:
I want the team to serve
coffee to guest quicker
Decrease coffee service time from an average of
5 minutes per guest to 3 minutes per guest by
November 1st, 2011.
7. Example of SMART TEAM goal::
“Achieve an average service score rating of 4.6 for
the year in Bayside”
Although there are some things that you will not
have total control of, this goal is attainable as it is
spread over the entire year and can be measured
easily against a set standard.

Examples of good targets:
“Increase server speed in resetting tables from 1
table in 3 minutes to 3 tables in five minutes in
the next 20 days”
“Improve server guest interaction comments by 5
extra tables per seating by October 31”
