Gluten Free Enchilada Casserol
1. GLUTEN FREE PICNIC WRAPS
A great way to enjoy a gluten free spring picnic.
2. INGREDIENTS
1 lb. ground beef
1 medium onion
1-2 cloves minced garlic
12 corn tortillas
2 C cool water
2/3 cup Gluten Free Creamy
Mushroom Soup Mix
1 10 oz. can of enchilada sauce
1 ½ lbs. grated cheese
3. STEP 1
Brown meat with onion and garlic.
In a measuring cup whisk 2 C water and soup mix
together and add to the meat mixture.
Bring to a boil and simmer for a few minutes.
Spray 9×13 baking pan with no-stick cooking spray.
Tear 6 tortillas into approximately 1 inch pieces and
spread in the bottom of the baking dish.
Top with half the meat sauce and ½ the cheese.
Repeat for a second layer.
Cover with foil and bake at 350 degrees until bubbly
throughout (approximately 45 minutes).
