Let's bake a Kanban pizza!
1. Let’s bake a Kanban Pizza!

2. • Physical safety: be aware when you use scissors
• Psychological safety: respect others. Each participant, even
those most reflective and shy, have an equal voice and
stature. All ideas are first evaluated for their promise and
potential before they are criticised or rejected
• Please no smartphones/tablets: keep your mobiles on the
table just for time-keeping
• When the organisers raise a hand, please be quiet and raise
your hand as well.

3. Understand how a Kanban system emerges
from an existing process while having fun!

Learning objectives
4. Kanban starts with what you do NOW
even if the current process is awful
no new role or responsibility
It encourages acts of leadership at every level
Agree to pursue improvement through evolutionary
change (Kaizen)

The foundational principles of Kanban
5. Kanban starts with what you are now
Usuallyfromanexistingprocess
Produce as many slices as you can
Play until asked to stop

6. First round: rules (I)• Kanban always starts where you are, from an
existing process.
• In the first round, teams need to prepare as many
pizza slices (Capricciosa) as possible
• Create the pizza with a slice of pizza base (paper
triangle), tomato sauce (red marker), three
mushrooms (white post-its) and one egg (yellow
post-it). Use glue to better fix the toppings on the
slice
• The tomato sauce covers the pizza bottom nicely
and the toppings are carefully cut and distributed
evenly across the slice

7. Massimo Sarti - Kanban Pizza - Skillsmatter - London - 3rd May 2017
First round: rules (II)
• Each table has one oven: there can be a
maximum of three pizza slices in the oven at
one time. Cooking time is at least 30 seconds
but no longer than 45 seconds
• You cannot add or remove slices whilst
baking!
• Please try to avoid waste i.e. raw materials
prepared but not used
• When the pizzeria owners decide that time’s
up, they clap their hands and tell you to stop
8. All clear? Let’s play!
Massimo Sarti - Kanban Pizza - Skillsmatter - London - 3rd May 2017
9. Pizza base (with or without sauce) = -4 points
Toppings = -1 point each
Finished slice = +10 points
Each slice counts negative
until the slice is 100% done

Second round
12. Visualise the flow
and limit Work in Progress (WiP)
Make your workflow explicit: use tape for creating work
stations (DOING) and storage (DONE) for production
materials (slices, etc) on the table
Limit the WiP for at least one station
Time box: 4 minutes
Massimo Sarti - Kanban Pizza - Skillsmatter - London - 3rd May 2017
13. Make process policies explicit
Use your best pizzas to create
a common“Definition of Done”
Time box: 2 minutes

17. Let’s change the game!
Like in the real world, some things change!
Massimo Sarti - Kanban Pizza - Skillsmatter - London - 3rd May 2017
18. New! New! New!
Ham & rocket salad pizza!
• Slim green post-its as rocket salad: each
post-it must be cut in 7 narrow slices
• Slim pink post-it as ham: cut in the middle
your post-it, each half is a slice of ham
• Each slice of pizza must have one single
slice of ham and 7 slices of rocket salad
• Warning! Ham and rocket salad must be
added AFTER having baked the slice of
pizza in the oven
Massimo Sarti - Kanban Pizza - Skillsmatter - London - 3rd May 2017
19. And now, we take orders!
• Cash on delivery: points are received only for fully
delivered order
• Orders should be picked up from a central station and
delivered to another central location using the proper
package
• Remember to write mm:ss only when the order is FULLY
delivered!
