I use freezer meals because I love finding the simplest way of doing something. I also love giving myself nights off from cooking. So, it's just natural that I'd find a way to combine the two of those together.
So, What are "Freezer Meals"?
I call freezer meals anything I can pull out of the freezer and it can be a big part of a meal... preferably the most time consuming part.
For instance:
• Spaghetti Sauce
• Chili
• Lasagna
• Pre-Cooked Chicken
• Meatloaf
• Stuffed Peppers
• Homemade Veggie Soup
• BBQ
And believe me… the list can go on and on and on...
Think about it, you can pull... say, a meatloaf mixture out of the freezer, let it thaw, and pop it in the oven. Or, take that same mixture and make stuffed peppers, salisbury steak, stuffed cabbage, or simply scramble it with gravy.
The heavy lifting… which is the mixing of the meatloaf mix… is done. That saves A LOT of time… not to mention energy, aggravation, and clean-up.
So… What is the Lazy Way to Create Freezer Meals? Simply cook double of whatever you're cooking and then freeze it for use at a later time. Pretty simply, huh? I'll give an example...
There's a skillet chicken recipe we love. It takes a little while so it's on my list of meals to cook when I have more time. It's such a savory dish with a thick gravy and you can do so many different things with it.
So, when I'm ALREADY spending the time to make it why not make double since I already:
• Have the sage, minced garlic, thyme, rosemary, pepper, and parsley out along with the correct measuring spoons
• Have to season chicken pieces
• Have the timer set to turn the chicken
• Have to make the gravy
How much more "Work" would it be to make double (or even triple) and just freeze it? Let me tell you, if you could smell my house when it's cooking you wouldn't even think of it as work.
Here's the thing, do this night after night, with whatever you're cooking (if it's freezable) and starting as soon as this week you'll be able to give yourself a couple of nights off whenever you want or need.
