Welcome
Dear Friends,
There are few things that give Greek people greater joy than to share their treasured
traditions and culture with their friends. Perhaps the only other greater joy is to
feed them. It is with that same great joy that I greet you and welcome you for the
first time as the new Dean of the Saint Spyridon Greek Orthodox Cathedral in
Worcester, Massachusetts to “My Big Fat Greek Festival.” I am truly indebted to my
predecessor, Fr. Dean Paleologos, as well as all the previous Parish Councils and the
former festival committees for all the work they have done building up this festival in
years past. I have had the blessing of seeing the hard work of this year’s committee
along with the current Council, and I am in awe, not only of all the work that it
takes, but of the incredible synergy that exists among the people and the committees
of this incredible community. I wish to thank all of our sponsors, volunteers, our
chairpeople, our parishioners, and all of our neighbors who have supported us, and
who show up year after year to make this festival successful.
I invite you to taste the homemade food crafted with recipes handed down from
generation to generation; watch our young people perform classical Greek folk
dances from various regions of Greece; and be sure to take a tour of the jewel of our
community, which is our church. Learn about our iconography and our architecture.
Take one of our guided tours, led by several of our parishioners. Enjoy your time
here and when you see me serving food or giving a tour please be sure to stop by and
say hello or “yasou.”

Welcome... to our 40th Grecian Festival! St. Spyridon is proud to share and
celebrate our faith, culture, and heritage with Worcester County and Central
Massachusetts. Join us for three fun-filled days of music, dance, and delicious
food. This year’s festival features Cathedral tours, traditional Greek dance
performances, live music, shopping at the Agora (marketplace), a Living Museum,
Youth Comedy Satire, and a raffle. As always, there will be plenty of delicious
traditional food. Be sure to enjoy a freshly made cup of Greek coffee at the Kafenio
(cafe).
I would like to thank our St. Spyridon parishioners for their hard work and
dedication. Our volunteers have devoted countless hours, along with their talents,
to ensure the success of the festival. I also wish to express my gratitude to our
Worcester County sponsors for their generous support to St. Spyridon Cathedral
throughout the years. The Grecian Festival is our biggest fundraiser that provides
for our programs, activities, and helps support those in need in the community. We

3-full days of the most delicious and
authentic Greek specialties to enjoy. At
this festival, we are once again featuring
the successful Chef Spotlight
Dinners. Paul Barber, Festival Culinary
Chairman is an award winning Chef and
owner, with his lovely wife Melina, of
Flying Rhino, and collaborated with
the best Greek chefs and restaurant
owners in Worcester County to present
Festival Daily Specials. Check the food
pages for the festival menu and Chef
Spotlight features. They are also posted
on our website GrecianFestival.org and
Facebook.
GREEK FOOD STATIONS
In addition to the Chef Spotlights, the
following Food Stations are offered all
weekend long. You can even take some
to go!
Traditional Food Line - with a selection
of dinners such as roasted Statler
chicken breast, lamb souvlaki (skewered
lamb), Pastitsio Dinner with meat or
vegetarian and all dinners served with
sides of rice pilaf, Greek green beans,
lemon roasted potatoes or Greek salad.
There is also a great selection of A la
carte choices to add to the meal or eat
separately.
A la carte choices include:
Spanakopita/Tiropita – Greek Spinach
or Cheese Pita.
Pastitsio- baked Greek macaroni
casserole, filled with oozing cheese and
bechamel sauce-offered both with meat
and vegetarian.
Grape Leaves and Greek Salad with
Greek seasonings, tomato, onion and
feta cheese and crown your meal with
delicious Greek pastry.
Gyro and Souvlaki Station - a quick
dining service with choices such
as skewered Chicken or Lamb souvlaki
in warm pita with tzatziki sauce; Gyro
(pronounced “yero”) an all-time favorite
Greek sandwich-seasoned combination
of ground lamb and beef-cooked on a
vertical “Gyro” rotisserie where you will
watch the meat carved off the spinning
cone and placed in warm pita bread with
the Greek delicious fixings.
Loukoumades Station - honey puffs
lovingly made before your eyes by
the LoukouMAMAs-soaked in honey
syrup...so delicious offered in ½ or full
dozens...and sprinkled with walnuts (if
desired) and powdered sugar. Great to
take some home and heat up later!
Greek Bakery Station – offers single
pieces or packaged to go in 1/2 and dozen
packages of baklava, kourambiedes
(Greek powdered sugar butter cookie),
kouroulakia-braided butter cookies,
galaktoboureko-an all time favorite
dessert made with creamy custard in a
crispy phyllo pastry, bathed with sweet
syrup. Take some home too!
Kafenio – Relax, Be Happy! For a more
relaxed social meal, just like the Greek’s
like to do it, the Kafenio has wait service
so that you can sip your wine or drink,
enjoy the high-octane coffee iced Frappe
or traditional Greek demitasse. Sample
one of the Mezethes, (Greek appetizers)
or better yet order the Pikilia Assortment
Plate. Eat drink and be merry while you
watch the excitement, listen to music or
join in the dancing.
In our beautifully renovated Cotsidas
Cultural Center you will enjoy the
Agora-Greek Bazaar (Market Place),
and feel as if you have been transported
to a Greek island where an eclectic
collection of Greek traditional and
fashionable specialties displayed by
vendors for your browsing and shopping
pleasure. Some of the items include
jewelry, arts and crafts, clothing,
spiritual items and icons, and so much
more. In our Cultural Museum display
you will experience what it was like to
live in a Greek home many years ago in
the “old country,” like our Yiayias and
Pappous did.

Our
Cathedral
The Grecian Festival has been a highlight of Worcester and Central Massachusetts
for the last 40 years. It has become the finest and the largest festival of New
England, with attendance exceeding 25,000 people. During the festival the Greek
Community recognizes and celebrates our forefathers, Greek Immigrants who came
to Worcester to work and create a new life, and in doing so made lasting contributions
to the political, economic and cultural development of Worcester. It’s also a time to
join in the festivities of our Hellenic Heritage. The Grecian Festival is one of our
largest fund raisers that supports all our educational, cultural, spiritual programs
and activities; youth and senior programs, our Board of Education certified Pre-
School, our Orthodox Food Pantry (working with the Worcester County Food Bank)
that feeds more than 200 families a month, Missions to help build homes in poor
countries, food and gift baskets provided to the poor and needy, and much more.

The St. Spyridon Greek Dance Group aims
to maintain and continue the tradition of
Greek dancing by teaching the dances
from all over Greece free of cost to all
age groups and levels of experience,
in order to promote dance as a way of
preserving regional culture and building
an understanding of the rich history of the
country as a whole. We are thrilled to share
our culture with you at the 2016 festival

bikes and get his autograph before he goes
to race one of the most competitive races
later this year.

Back by popular demand! This year “The Living Museum” is sponsored by AJ
Productions, a local production company, which includes the cast from their
touring show, “Joseph’s Dream” which was most recently performed at the
Hanover Theater in Worcester. Come hear the tales of Grecian heroes including
Hippocrates, Aphrodite, Hercules, Cleopatra, the Muses, and many more. To

History of
Greek
Dance
Greece is one of the few countries in
the world where folk dances are as alive
today as they were in ancient times.
Dance has always played an important
role in the life of Greeks.
In Ancient Greece, dance derived
its importance from its function as an
integral part of social and religious life.
Early Greek dance most likely began
on the “chorostasi” (threshing floor), a
circular paved area where wheat was
harvested. A charioteer stood on a flat
board, underneath was assembled stone
to thresh and separate the wheat from
the chaff as he was pulled around. After
the harvest, it was time for celebration,
and only natural to clear the space of the
circular threshing floor and celebrate
with dancing. These early dances at the
threshing floor eventually evolved into
the construction of amphitheaters with
its circular space (orchestra) used for
the chorus and adopted as part of the
Greek tragedy.
Ancient Greeks believed that dance
was divinely inspired. Plato said that
dance arose from the natural desire
of the young to move their bodies and
express emotions especially that of joy,
in Greek “hara”, from which the Greek
word for dance, “horos” is derived. The
English words chorus, chorale, choir,
and choreography all come from this
same Greek word. The roots of Modern
Greek dance are firmly rooted in the
ancient Greek dances. The popular
rhythms used in Greek dances today
use the same 7/8 and 5/4 rhythms
discovered in ancient poetry. In the
Iliad, Homer wrote about a wedding
dance where brides singing wedding
songs were led from their homes while
young men danced and whirled to the
sounds of flutes and lyres.
The ritual use of dance can still be seen
in the traditional Byzantine form of the

“Isaia Horeve”, Dance of Isaiah.
Greece has 6 mainland regions; Epirus,
Macedonia, Thrace, Thessaly, Central
Greece and Peloponnesus. Each of
these regions has their own distinctive
dances as do the Greek islands. The
two basic categories from which all the
dances derive are springing/leaping
dances and the shuffle/dragging dances
known as “Syrtos”. Both of these dances
are done in an open circle, start with the
right foot and move counter-clockwise.
Each dancer is linked by holding hands,
wrists or shoulders. Up until modern
times a man never held a woman’s hand
but instead a handkerchief.
Leaping dances with their distinctive
hopping are lively and energetic and
trace their beginning to ancient Crete.
Syrtos dances are even older and are
the oldest known forms of dance, in
fact Homer mentions the Syrto dance
in his ancient writings. Many regions
in Greece have their own variation of
the Syrtos dance, as each region has
tailored it to match their own traditions.
Today, the Syrtos dances are the
common dances seen at Greek festivals
and weddings. The most well-known
of these dances is the Kalamatianos,
which uses the same steps as the Syrtos.
The name was derived from the town of
Kalamata located in Southern Greece.
The Kalamatianos dance is one of the
few Greek folk dances that is popular
the world over and is commonly used
in social gatherings and other festive
occasions. It is also typically regarded
as the national dance of Greece.

lessons for beginners under the main
tent Saturday afternoon.
SAINT SPYRIDON DANCE GROUP
At St. Spyridon, the Greek Dance Group aims
to maintain and continue the tradition of Greek
dancing by teaching the dances of Greece
to all age groups and levels of experience.
The group introduces students to a range of
dynamic dances from all over Greece—Crete,
Peloponesos, Thraki, Ikaria, Macedonia,
Pontos, etc.—in order to promote dance as
a way of preserving regional culture and
building an understanding of the rich history
of the country as a whole.
Our four dance groups, which consist of
performers from kindergarten through
adulthood, have taken the Greek traditions
and culture out into the greater community,
performing at First Night celebrations; high
school, college, international and church
festivals; weddings; and of course, the St.
Spyridon Grecian Festival. We are thrilled to
share our culture with you at the 2016 festival
and hope you enjoy!

Orthodoxy
THE ORTHODOX CHRISTIAN FAITH
Orthodox Christians hold true to a
tradition which has been handed
down unchanged from the time of
the Apostles. For over one thousand
years from the Day of Pentecost,
Orthodoxy was the only Christian
tradition. Orthodoxy is practiced
the same way today as it was in
the Church of the catacombs, the
Church of the Apostles, the Fathers,
and martyrs. While some may find
the services, traditions, or practices
of Orthodoxy to be “old fashioned”,
or “not in keeping with today’s
society in America”, it is this very
factor that gives Orthodoxy its
inherent strength. Orthodoxy has
always held true to those values
and principles given to mankind
by God, and through his Son our
savior JESUS CHRIST, rather than
mold and change its beliefs and
principles to accommodate an ever
changing society. While it may
be practiced in many languages
throughout the world, the principles,
traditions, and liturgies are the
same. In closely watching the Divine
Liturgy, visitors can readily see the
origins and elements of our worship
service, such as the Nicene Creed,
the Epistle, Gospel readings and
the Lord’s Prayer. Orthodoxy is an
inheritance: the Bible, the Creed, the
decrees of the Ecumenical Councils,
the service books, the worship, and
the art have formed the “Tradition”
of the Church.
SAINT SPYRIDON
Our Cathedral is named after
Saint Spyridon, who died in the 4th
century. He was born in Cyprus
and is honored in both the Eastern
and Western Churches. He was
compassionate and loving; a humble
shepherd, Bishop of Trimythus,
confessor of the faith during times
of persecution, and an outstanding
teacher of Orthodoxy at the First
Ecumenical Council of Nicaea in
325. Saint Spyridon is noted for the
miracles he performed during his
life and is known for his great piety,
honesty, and gentleness. When you
walk into the Cathedral you will enter
the Narthex and see a glass display
case with the slippers of Saint
Spyridon, given to us by the Bishop
of Corfu. The body of Saint Spyridon
has remained completely intact. The
Holy Relics are found in the church
in Kerkyra on the island of Corfu,
Greece. Each year, on the day of his
commemoration, December 12, the
slippers are found completely worn
out. The serving priests change the
saint’s shoes every year, only to find
them worn out again the next year. It
is the belief of Orthodox Christians
that Saint Spyridon continues
walking today performing miracles.

In
Memory
Sadly, after Grecian Festival ’14, we
lost two pillars of our community who
had been involved with the Festival
every year since its inception in
1976, James Bazoukas and Charles
Fotos.
James Bazoukas was an
extremely active member of the
Cathedral serving on the Parish
Council, Finance Committee,
House Committee and Building
Committee. Jim was instrumental
in the restoration of the Cathedral
and the renovation of the Family
Center, where he led the committees
overseeing the installation of air
conditioning in the Cathedral in
2001 and the renovation of the
area below the Cathedral housing
the Preschool in 2010. Jim was a
member of the Order of AHEPA,
the Enosis Epirotic Society, and
was Treasurer of the Board of
Directors of Holy Trinity Nursing
and Rehabilitation Center and St.
George’s Hellenic Benefit Society
of Tsamanta. Jim worked with the
Raffle subcommittee for the first
Festival in 1976 and volunteered
in all subsequent festivals in areas
to include Facilities, Finance
& Couriers, and Beverages
subcommittees.
Charles Fotos was a constant
presence in the Parish with the
church becoming his second home.
Charlie taught Sunday School, was
a GOYA (Greek Orthodox Youth
Association) advisor, and served
multiple terms on the Parish
Council as President, Treasurer and
Secretary. Charlie also sang in the
choir for over 50 years and was a
key contributor to the Family Center
renovation project serving on the
Building and House Committees.
Charlie was also extremely active
with Holy Trinity Eastern Orthodox
Nursing & Rehabilitation Center
and was the driving force in the
operation of the Orthodox Food
Pantry located at Saint Spyridon.
Charlie was Facilities co-chair
for the first Festival in 1976
and he continued to assist that
subcommittee as well as the Finance
& Couriers, Food, Food Line, and
Kitchen subcommittees for every
Festival.
Jim and Charlie loved their
church, family, and friends and
both took an immense pride in
representing the Greek Orthodox
community to Worcester and Central
Massachusetts. We join their
families in their sadness for the loss
of these individuals but we take
solace in the knowledge that their
legacy and memories will be eternal.

The Draught House Bar & Grill and the Manor Banquet Facility are located
on route 12 in West Boylston , Massachusetts (minutes from Worcester).
They are owned and operated by Savvas Fotiadis , his sister Ekaterini
Fotiadis-Rajotte and his brother Antonios Fotiadis.
The Fotiadis family has grown in the restaurant industry. The siblings
worked in a variety of Boston restaurants while they were in college. In
1987 they purchased Dean Park Pizza & Restaurant. They operated Dean
Park for 10 years. In 1997, they bought the Old Franklin Manor which is
now known as the Draught House Bar & Grill and The Manor Banquet
Facility. Recently they have upgraded the bar and decor in the banquet
facility. There are lots of new things happening.
Savvas, Ekaterini and Antonios along with their Chef Egi Velieu (who has
been part of the Manor Family for almost 15 years), have created a very
diverse menu.
They have become known for their mouth-watering baby back ribs, Prime
Rib (available on Friday and Saturday nights), and homemade dolmades.

Steak to Chicken Calabria...

Combining the culinary experience and love of Greek Food Paul and Melina, gladly accepted the offer to once again
collaborate on this festival’s menu design and offerings. After both graduating from Boston University, Paul and
Melina were married at St. Spyridon Greek Orthodox Cathedral and made Worcester their home. Having operated
the Flying Rhino for 17 years their passion for food is reflected in their menu seasonally. The menu is inspired by
the Rhino flying around the world grabbing eclectic dishes that are showcased in this well-diverse menu. They are
proud to be part of the rich Hellenic Community as well as greater Worcester County. Paul and Melina’s featured
Chef’s Spotlight for Saturday’s Dinner is their own recipe of slow cooked Lamb Shank, guaranteed to fall off the
bone.

sea salt and pepper
Meditereanean oregano to taste
2 tbsp exta virgin olive oil
2 onions, chopped
3 large carrots
chopped fresh thyme
Sprinkle shanks with salt and pepper and oregano. Heat oil in large pot over medium heat. Cook
shanks until brown on all sides. Remove from pan and place to the side.
Add, carrots and garlic and the chopped onions to the same pot and saute until golden brown.
Stir in both off the broths, the wine and the tomatoes and add the rosemary and thyme. Place
the shanks back into the pot, pressing down till the shanks are covered. Bring to a boil, then
reduce heat to medium-low. Cover, and simmer until meat is tender, about 2 to 2.5 hours.
Remove cover from pot. Simmer about 20 minutes longer. Remove and place shanks into a
platter. Continue to boil juices in pot until thickened, about 15 to 20 minutes. Drizzled the
thickened juices over the shanks.

20 oz Seafood stock or Clam juice (see below)
10 oz of tomato sauce prepared ahead of time
2lb of red bliss potatoes diced
2 stocks of fresh leeks (cut ends off, quartered the long way & sliced half inch thick )
1 oz chopped fresh garlic 8 oz white wine
¼ tsp thyme 1 teaspoon celery salt
2 bay leaves2 bay leaves 1 tsp fennel seed chopped
1 tsp of basil dry 1 Pinch of saffron
8 oz baby shrimp 90+ count /lb or 1Lb shrimp pealed 16-20 count/lb
16 oz count necks or steamers, or 8 oz Fresh Chopped clams.
16 oz fresh mussels
8 oz dice firm fish (swordfish, salmon, tuna)
(optional) 1 whole lobster, claws pulled & cut in quarters
(optional) 16 oz scallops(optional) 16 oz scallops
SEAFOOD STOCK
Pick up FRESH fish bones, skin, heads, tails, shrimp shells. 2lb total.
Rinse well in cold water, add about one quart of water per pound of bones, add a couple
of carrot, one stock of celery without leaves, one medium onion. Salt & pepper lightly.
Bring to a boil & simmer without cover until reduced by half.
RECIPE
In a saucepan, heat dash of extra virgin olive oil & add, leeks, garlicIn a saucepan, heat dash of extra virgin olive oil & add, leeks, garlic
Sauté until leeks wilted
Add 8 oz white wine
Simmer with wine for five minutes until the alcohol evaporates.
Add: Seafood broth or Clam juice, thyme, celery salt, fennel seed, basil, bay leaves,
Tomato Sauce, Salt & pepper to taste
Slowly bring to a boil & simmer until diced potatoes are almost soft to the bite.
Add SeafoodAdd Seafood
Simmer for 15 more minutes or until the diced potatoes, lobster meat is done & the
mussels are open. Taste & season with salt & pepper before serving.
