This study measured the aerobic plate count (APC) and thiobarbituric acid (TBA) levels in pork patties over 8 days of storage using polypropylene (PP) or vacuum packaging. The APC increased more in PP packaging compared to vacuum packaging over time. TBA levels, a measure of lipid oxidation, initially increased more in PP packaging but by day 8 were higher in vacuum packaged samples.
