2. Healthy Chocolate
Chip Cookie
Ingredients
2/3 cups plus 1/2 cup wheat
flour
1/4 tsp salt
1/2 tsp baking soda
2 tbsp brown sugar 4
1/4 cup walnut ( ground)
5 tbsp milk of choice ( I used
vanilla soy milk)
1 tsp vanilla
6 tbsp cooking oil
1/4 cup chocolate chips
3. Direction
Place ingredients 1 to 5 in a bowl. Mix
the ingredients thoroughly using a
wire whisk or spoon. Please do this
because we want the baking soda to
be completely mix with the rest of the
ingredients.
Mix together ingredients 6 to 8 and
add into the flour mixture.
Preheat oven into 380 F
Combine the mixture using your
hand. It will become crumbly but just
keep on mixing and add in the
chocolate chips.
Form into a small ball and flatten a
little bit. Around 1/4 " thick.
Bake into preheated oven for 7
minutes and remove from the oven.
Serve and enjoy.
Notes
Let the cookies sit on the cookie sheet
for 10 more minutes before you
remove from the pan. Doing this will
continually cook the cookies.
Make your cookie larger and flatter
This is fibrous type of cookie due to
the wheat flour.
4. Sesame Seed Chocolates
Ingredients
2 tbsp cocoa unsweetened
powder
1/2 cup figs
1/2 cup walnut
1/2 tbsp of sugar or more
2 tbsp Sesame seed to mix
with the other ingredients
1/4 cup Sesame seeds to coat
the chocolates
5. Instructions
Place ingredients 1 - 5 in a
processor until thoroughly
grounded and become sticky.
Remove from the processor
and form balls. Roll into
Sesames seed that are place
in a plate. Enjoy!
6. Healthy Oreos
Ingredients
3/4 cup spelt flour
1/4 cup Hershey's Cocoa natural
Unsweetened
1/4 cup sugar
1/4 tsp baking soda
1 tsp pure vanilla extract / I
used imitation
1/4 cup canola oil
3 tbsp silk soy milk chocolate
flavor
2 tbsp agave syrup
Filling:
1/2 cup confectioner's sugar
1/2 tsp pure or imitation vanilla
extract
1/4 cup coconut butter
7. Instructions
Grease/ Brush a cookie sheet. Set
aside.
Mix 1 to 4 ingredients in a large bowl
and whisk using to combine. Form a
well in the middle and set aside.
Put ingredients 5 to 8 in a separate
small bowl and mix completely. Add
into the flour mixture and combine
and mix thoroughly using your hands.
The mixture will feel crumbly and
smushy. Form the dough into a ball
and put the dough in the ziploc and
refregirate for 30 minutes.
Remove dough from bag and roll into
a thin dough. I had trouble rolling the
dough into flat because it was
crumbly and it stuck on the rolling
pin, so I put parchment paper on top
of the dough and work my way on
flattening it. Then I used biscuit
cutter to form circles. You can use
circle shape lid for this also.
Pre heat oven to 300 F
For the Filling:
Mix all the ingredients in a bowl.
Make sure that coconut butter is
melted. Then store the mixture in the
fridge for 30 minutes to harden it.
After this, put a small amount of the
filling in the round dough. I used my
hand to do this because it broke when
I used spoon. Top the other half and
place into the greased cookie sheet
and bake
To Bake the Cookies:
Pre heat oven to 300 F
Bake the cookies for 10 minutes and
remove from the oven. Let it cool in
the pan for 10 minutes.
Serve and Enjoy!
8. Kiwi,Watermelon
Smoothie
Ingredients
1 cup coarsely chopped
seeded/seedless watermelon
1 kiwi fruit, peeled and cut
into pieces
2 ice cubes
1 ripe banana, frozen and cut
into chunks
1/4 cup chilled apple juice
9. Instructions
Place all ingredients in the
blender and blend until
smooth. Pour mixture into
glass and enjoy!
Notes
I usually use fresh apple juice
and juice it from a juicing
machine. I f you do not have
the machine, you can use the
bottle juice.
10. Sponge Cake
Ingredients
Sponge Cake Cups ( store
bought )
1/4 cup Mascarpone Cheese
1/4 cup heavy whipped cream
3 tbsp sugar
4 pcs strawberry
Wash strawberries and set
aside.
Arrange the sponge cake cups in
a plate. Set aside.
Put ingredients 1-3 in a bowl
and mix with stand mixer for 5
minutes until soft peaks form.
Meanwhile, slice the strawberry
into fan.
When the whipped cream is
done place it on top of the
sponge cake and add in the
strawberry
11. Instructions
Wash strawberries and set
aside.
