Chapter 1: Introduction
As the American population's average age continues to climb, Alzheimer's
disease has become more prevalent. In fact, it has claimed enough lives to
now be the third leading cause of death in elderly people, after heart
disease and cancer. Over 4.5 million Americans have been diagnosed with
Alzheimer's disease, a number that has grown dramatically in recent
years. If current trends continue, that number is projected to rise to 16
million by the year 2050. In addition, over $100 billion has been spent on
Alzheimer's disease in the U.S. alone!
This deadly neurodegenerative disease brings additional pain and
heartache for the family of Alzheimer's patients, because it affects
patients' brain cells, in turn weakening patients' memories, emotional and
social skills, language abilities, and other mental functions.

Chapter 2: What is alzheimer's
disease?
Alzheimer's has been a recognized disease for over one hundred years. Prior to
that time, mental deterioration and forgetfulness were considered a natural stage,
known as senility, in the aging process.
In 1907, Dr. Alois Alzheimer published the results of an autopsy he conducted on a
woman who had been severely demented before her death in 1906. In that
autopsy, Dr. Alzheimer discovered neurofibrillary tangles and senile plaques in her
brain. Such characteristics are not exclusive to Alzheimer's disease; they can also
occur in people's brains who have other neurodegenerative diseases.
The plaques are composed primarily of a protein known as beta amyloid. This
form of protein can accumulate quickly and easily, and it is toxic to brain cells. In
other words, when deposits of beta amyloid build up as plaque, it kills brain cells.
They tend to build up on the amygdala, neocortex, and hippocampus especially.

The importance of eating a healthy, balanced diet in your mission to lower your risk of
Alzheimer's disease cannot be overstated.
One powerful story that shows this principle of how mental health is linked with
physical health occurred with prisoners of war. Held in Japanese internment camps,
these soldiers were on a limited diet. As a result of not taking in enough food for
nearly four long years, several thousand of these soldiers developed premature
senility. Despite not being of the age to normally become senile, the malnutrition
expedited their regression.
