Pisco / Peru more than 400 years of History and Tradition (1613 -2013).
Pisco bilingual magazine in print, whose purpose is to inform others about the marvelous Peruvian spirit called Pisco. Within its pages are different and entertaining sections that will take readers back to the past, with the best presentation in over 400 years of history and tradition, and bring them again to the present. The magazine discusses the traditions and technology used to produce the best Pisco in the world, as well as how to bring this same tradition and quality to the future. It is a call to those who will join in the effort to spread our message to the world.

Hemos decidido a partir de esta edición nombrar nuestros ejemplares
por cosechas, una idea que hemos tomado de nuestra escuela de
sumillería la Escuela Peruana de Sommeliers ¡mil gracias!
Bienvenidos a la Cosecha III de Pisco revista bilingüe.
Les comento que el año pasado ha sido muy intenso, empezamos
realizando la Cata No 100 del blog que editamos “Noches de Cata”
más de 600 Piscos catados y todas las catas documentadas en
www.nochesdecata.blogspot.com
Estuvimos en la fiesta del Pisco Sour, celebrando y preparándonos para
celebrar el año 2013 el IV Centenario de la emisión del Testamento
de Pedro Manuel Bafia el griego, documento muy importante en la
historia del Pisco que todos debemos conocer; luego participamos
en el curso de catadores en la Universidad Agraria, requisito para
que nuestros puntajes sean válidos en los Concursos Regionales y
Nacionales de Pisco; En Mayo visitamos Nazca para la XXXI Semana
Turística de Nazca 2012 “María Reiche Neumann”, X Encuentro de
Productores y Concurso de Piscos Nazca; Aprovechamos para realizar
varias visitas de campo; una a la Bodega Majoro de Pisco Majoro,
y camino a Ica para conocer la moderna Bodega La Caravedo que
elabora Pisco Portón y terminamos con la Bodega 4 Gallos; En julio
se celebró la fiesta del Pisco y esta vez fuimos a Barranco; asimismo
participamos de los talleres de Grappa y Pisco en el mes de agosto,
la fiesta de la Poda en setiembre. Al Panel de Noches de Cata le tocó
ofrecer las Charlas y Catas en Mistura 2012 difundiendo la cultura del
Pisco con un mismo mensaje; Participamos en la cata del Expo Pisco
Wong y en noviembre en los Concursos Regionales y Nacionales
del 2012 en Tacna. Como verán el Pisco no se detiene; todo el año
hemos tenido eventos, concursos, festivales, talleres de cata, charlas,
catas guiadas, visitas de campo, etc.

We have decided, starting with this edition, to name our issues by
harvests, an idea that we have adopted from our sommelier school
“Escuela Peruana de Sommeliers.” Thanks so much!
Welcome to the Third Harvest of Pisco, a bilingual magazine.
I would like to state that last year has been very intense. We began
the year with the 100th Pisco Tasting from the blog that we edit
“Pisco Tasting Nights.” The website has more than 600 Piscos that
have been tasted, and all of the tastings are documented at www.
nochesdecata.blogspot.com
We were present in the Festival of the Pisco Sour, celebrating and
preparing ourselves to celebrate this year 2013 the IV Centennial of
the emission of the Testiment of Pedro Manuel Bafia, known as the
Greek, very important document for the history of Pisco, that we all
should learn about. Later we participated in a course for Pisco Tasters
at the Universidad Agraria, a requirement in order for our scores to be
valid at the Regional and National Competitions of Pisco. In May we
visited Nazca for the XXXI Nazca Tourist Week 2012 “Maria Reiche
Neumann.” In Nazca there was also the X Meeting of Producers
and Pisco Competition of Nazca. We took advantage of the event to
make various field trips; one to the Bodega Majoro de Pisco Majoro,
another to Ica in order to visit the modern Bodega La Caravedo which
produces Pisco Porton, and we ended our trip with the Bodega 4
Gallos. In July the Festival of Pisco was celebrated, and we visited
Barranco. We also participated in the workshops for Grappa and Pisco
in the month of August, and the Poda Festival in September. The
Panel from “Pisco Tasting Nights” offered talks and tastings at Mistura
2012, and was able to spread the culture of Pisco under an only
message. We participated in the Tasting of the Expo Pisco Wong,
and in the 2012 Regional and National Competitions in Tacna. As
you will see, Pisco will not be stopped! All year we have had events,
competitions, festivals, tasting workshops, talks, guided tastings, field
visits, etc.

Nos encontrábamos de visita en unos viñedos del Sur del país conversando
con el Ing Edwin Landeo y en eso dirigiéndose hacia una de las vides,
nos muestra una hoja totalmente doblada cuya cara superior está llena
de unos bultos amarillentos. Es así que la conversación se centró en la
Filoxera y en la gran Plaga del Siglo XIX.
We were visiting one of the vineyards in Southern Peru and chatting with
Engineer Edwin Landeo. He motioned towards one of the vines, and
showed us a leaf that was totally doubled over, and its top face was full
of small yellow lumps. It was then that the conversation turned to the
Phylloxera and the Great Plague of the 19th Century.

Es sabido que con el intercambio comercial que se efectuaba vía marítima
durante la segunda mitad del siglo XIX, se trasladaron también plagas,
que atacaron los viñedos de Europa. Tres de ellas de origen americano
contra las que la vitis europea no estaba preparada, ocasionaron grandes
daños antes de encontrar los remedios contra las mismas, cosa que
se hizo con grandes sacrificios económicos y, por primera vez, con la
inestimable ayuda de la ciencia.
It is known that during the second half of the 19th Century, under the
commercial exchange that took place over the sea, plagues that attacked
the vines of Europe were also transported from the new world. Three of
them had American origin, and against which the vitis europea was not
prepared. These plagues caused great damages until remedies were
found to counteract them, which was done with large economic sacrifices,
and for the first time, with the invaluable help of science.

Se considera la filoxera, Daktulosphaira vitifoliae (Fitch, 1854), como la
plaga más global, devastadora y decisiva de la historia de la viticultura
mundial. Y es que ningún evento, plaga o enfermedad, se propagó
tan rápido e impulsó el cambio de los ejes de producción de uva de
nuestro planeta como lo hizo la llegada de este insecto a Europa desde
Norteamérica a finales del siglo XIX
The Phylloxera, Daktulosphaira vitifoliae (Fitch, 1854), is considered to be
the most global, devastating and decisive plague of the world viticulture
history. The fact is that no event, plague, or sickness, spread as fast and
caused as much change to the centers of grape production as the arrival
of this insect to Europe did at the end of the 19th Century.
Aunque hay algunas condiciones naturales que la frenan (ambientes
áridos y suelos arenosos), en el resto de casos no hay tratamiento químico
ni natural contra ella, por lo que la única solución fue sustituir los pies
europeos por los americanos. Más de cinco millones de hectáreas de
viñedo tuvieron que ser arrancadas en toda Europa entre 1870 y 1930.
La producción de vino sufrió grandes altibajos; la escasez en determinados
períodos elevó los precios del vino hasta valores jamás alcanzados; el
mercado internacional de vino alcanzó volúmenes nunca conocidos; la
localización de los viñedos experimentó grandes cambios. Al final del
proceso, la lucha contra las plagas y la superación de las crisis propició
grandes avances científicos y una modernización del sector, hasta el
punto que la viticultura del siglo XX era ya realmente una “nueva viticultura”.
Although there are some natural conditions that slow the spread (dry
environments and sandy soils), in the rest of the cases there is no natural
chemical treatment against this plague. The only solution was to substitute
European bases for American ones. More than 5 million hectares of
vineyards had to be pulled up throughout Europe from 1870 to 1930.
The production of wine suffered large ups and downs; the scarcity in
determined periods increased the price of wine to values that had never
been reached before. The international wine market reached volumes
never before seen; the areas of vineyards experienced huge changes. At
the end of the process, the fight against the plagues and the surmounting
of the crisis brought about great scientific advances and a modernization
of the sector, up to the point that viticulture in the 20th Century really was a
“new viticulture.”

Mujica Gallo’s recollection of a cheerful reunion with Pablo Picasso.

The Flamenco party had begun early during broad daylight, under
the pretext of a lunch under the warm Nice sun, like the gold colored
Guadalquivir River passing through the middle of the Seville Fair. It was only
that there, on the Costa Azul, no one smelled the perfume of oranges, nor
did they enjoy the flowerpots filled with geraniums, nor the patios filled with
white jasmine, nor did they see the bull and the light of the arena.
Pero allí en esa costa soleada de Francia, está viva la figura de Picasso, el
eterno mozalbete que todo lo españoliza y rejuvenece. Allí este él sonriente
al desgrane de los ritmos gitanos entre cañas, ayes y palmas. El ambiente
flamenco desplaza Niza a Andalucía. Atisbamos desde esta bellísima
costa francesa el embrujo del barrio de Santa Cruz y el garbo de La giralda.

La juerga flamenca había empezado a plena luz, temprano con el pretexto
de un almuerzo bajo el sol templado de Niza, dorado el mar como el
Guadalquivir en plena feria de Sevilla. Solo que allí, en la Costa Azul, no
se respira el perfume de los naranjos ni se goza de las macetas cargadas
de geranios, ni de los patios blancos de jazmines, ni se vislumbra aquel
señorío taurino y aquella luminosidad de la maestranza.
But there on the sunny coast of France, the figure of Picasso is alive, the
eternal lad that makes everything Spanish and young again. There he is,
smiling as he follows the gypsy rhythms of the cañas, the ay-yay-yayes
and the clapping. The flamenco ambiance transports Nice to Andalucia.
We could perceive from the beautiful French coast the enchantment of the
Santa Cruz barrio and the grace of La Giralda.
Y es que ahora allí, frente a Picasso, está bailando Antonio Gades y esto,
que ya es mucho no es todo. Flamea también soltándose la cola lunareja,
el fuego de “La Polaca” cubierto el moño de claveles. ¡Inefable gracia
gitana de los ojos, las manos y los pies y cintura en trance! “La Polaca”
es sin embargo, castellana nació en Madrid. No tiene una gota de sangre
“cale”. Se llama Josefa Cotillo.
Rafael Alberti deja caer sus piropos andaluces y entona majestuosamente
las cuerdas de su lira, frente a la pareja del mar en el crepúsculo.
La lira del cantor de “Mar y Tierra” Luis Miguel “Dominguín” se yergue
como en la plaza y palmotea. En sus olés hay nostalgia de los ruedos
donde saboreaba en otros tiempos la pelea.
The fact is that now, there, in front of Picasso, Antonio Gades is dancing,

Coincide pues el nombre de Picasso con el de sus fabricantes: Picasso,
Pisco Picasso. Al pintor halaga el descubrimiento de la botella homónima.
Le digo yo que el éxito de la marca se atribuía a la popularidad de su
nombre.
Bajo su gorra marrón, algo ladeada, su rostro expresivo tornose
verdaderamente juvenil. Una chaqueta gris sobre un jersey verde, los
pantalones a cuadros y los zapatos deportivos de igual color que la gorra
marrón, ayudaban sin duda a hacer más jovial a Picasso, más airosa su
alegre imagen, sin rasgo alguno de afectación. Picasso es la llaneza pura.
Las botellas de jerez y de málaga y las del vino tinto -creo que este es
de Cataluña- se agota con facilidad asombrosa. Señales de fatiga en los
rostros. La juerga se apagaba cuando apagaba por el horizonte la luz del
sol. Picasso se despedía.
El interminable almuerzo parecía que llegaba a su final, y he aquí que
inesperadamente reverdece y todo se reanima al calor y al olor del Pisco
peruano. Los pies de Antonio Gades y los ojos de “La Polaca”, y la voz de
Rafael Alberti vuelven a desplegar su gracia rítmica. Luis Miguel y Picasso
sincronizan en su palmoteo. Luis Miguel jalea, siempre nostálgico olés…
Picasso has recently been operated on. He can’t taste the sherry nor the
wine nor the Malaga. He isn’t even looking nor does he need to. Picasso is
witty and cheerful like a young man who has just started to live. I hand him
a bottle of Pisco which he smell appreciatively.
Everyone drinks directly from the bottle, except for him. His alert, smiling look
centers on the brand “Picasso” of this bottle of Pisco which contains the
most Peruvian of all liquors, the healthiest and the one most internationally
reknown. The painter then discovers the happy coincidence of the names
and I told him that the success of the brand is due to the popularity of his
name.
Under his brown hat, slightly askew, his expressive face becomes truly
youthful. A gray coat over a green jersey, the checkered pants and the
sporty shoes, the same color as
the hat, help, without a doubt, make Picasso seem more jovial, make his
happy image more graceful, without a trace of affectation. Picasso is pure
simplicity.
The bottles of sherry, of Malaga and red wine--I think the red wine is from
Cataluña - disappear with shocking ease. There are signs of fatigue on
the faces. The party ends when the light of the sun disappears over the
horizon. Picasso says good bye. The endless lunch seemed to reach its
end, and here I have unexpectedly revived it.
But the party starts anew with the warm atmosphere and the aroma of
the Peruvian Pisco. Luis Miguel and Picasso synchronize their handclapping with Antonio Gades and La Polaca’s dancing and Rafael Alberti’s
humming...
El pisco es del Perú
Picasso esta recién operado. No puede saborear ni el jerez ni los vinos ni
el málaga. No mira siquiera. Ni falta que le hace. Picasso es dicharachero
y alegre como el joven que empieza a vivir. Le acerco la botella de Pisco,
un aguardiente peruano, que Picasso olfatea alabando el olor a uva. Todos
beben directamente de la botella menos él. Su mirada risueña alerta, se
fija en la marca “Picasso” de este Pisco, marca estampada en la botella
peruana que contiene el más peruano de los licores, el más sano y el de
mayor éxito internacional.

10. La última botella de Pisco va de mano en mano. El Pisco no es amargo ni
es dulce, pero pasa la garganta dulcemente, Picasso está especialmente
interesado en el destino del “Pisco Picasso”. Mide su contenido y la
acaricia: la hace suya.
Asocio ahora a esta juerga gitana aquellas inolvidables “Tradiciones de
Don Ricardo Palma”, tan elogiadas por Unamuno, Palma con gracejo
limeño, sostiene que una comida rociada con tinto de Cataluña, más el
jerez en mezcla con el málaga, acompañado de buenos tragos de Pisco,
“el alborotador” aguardiente peruano, suscita la necesidad inmediata del
baile, eso que en el Perú llamamos jarana y que en España se llama juerga.
Estamos, pues aplicando en Niza la receta del gran escritor peruano.
Pero en realidad ahora no solo el día se ha hecho noche, sino que ya
la noche se está haciendo madrugada. Vemos brillar la luna mientras
Picasso ante la pregunta sobre el estado de su salud después de tan
movida sobremesa, y de la reciente operación quirúrgica que ha sufrido,
se desabrocha aparatosamente aquellos pantalones cuadriculados en
negro y blanco para mostrarnos la cicatriz que sobre su vientre ha dejado
el bisturí, Picasso pone al descubierto con el mismo empaque viril que
un matador de toros exhibe ante sus admiradoras la huella todavía viva
de la última cornada, Picasso tiene en ese instante el porte de vanidad

de pintar, tan vital para mí –dijo- como respirar y comer”, agrego quejoso,
aludiendo entonces a su convalecencia porque en esos momentos
Jacqueline por prescripción medica no le dejaba ni coger un lápiz.
Mientras Niza hervía de gente en sus terrazas y ya Picasso descansaba en
su cama después de este almuerzo y su noche, los amigos, Luis Miguel
entre ellos alborotándose desesperadamente: buscan y corren, porque
Picasso pedía rogaba, exigía que le recuperaran en el acto la botella vacía
que llevaba su nombre.
“Ella será para mí –dijo- un recuerdo inolvidable de este día y siempre
gozare viendo mi nombre en la botella”.
The last bottle of Pisco is passed on from hand to hand. Pisco isn’t bitter,
nor is it sweet, but it slides down the throat smoothly. Picasso is especially
interested in the destination of the Pisco Picasso. He measures the
contents and caresses the bottle: he makes it his own.
I now associate this gypsy party to those unforgettable “Traditions of Don
Ricardo Palma,” so praised by Unamuno. Palma, with his Lima-ease-ofexpression, claims that food flavoured with a mix of Cataluña red wine,
sherry and Malaga, accompanied by good Pisco, “the troublesome”
Peruvian firewater, necessitates the immediacy of dance; something that
we in Peru call “jarana” and in Spain they call “juerga,” And there we were,
in Nice, applying the recipe of the great Peruvian writer.
But in fact now not only the day had become night, but the night was
becoming morning. We watch the moon shine while Picasso, in light of
the question about the state of his health after such a lively gathering,
dramatically unbuttons those black and white checkered pants in order to
show us his scar. Picasso then shows the same viril and arrogant stance of
a matador showing his livid scars to his fans.
I ask him then if he hadn’t at one time in his childhood, dreamed of
becoming a bullfigthter. The answer was clear enough: “I have not thought
of anything else,” he told me “except being a painter.” “But since you were
a child,” I add. And with a sort of melancholy he continues to talk, gazing
at me, “I am surely the only child in the world that did not ride a bicycle in
order to have fun; I was always absorbed by the urgency of my brushes. It
was the need to pain, which was so vital for me,” he said, “like breathing
and eating,” he added, complaining that Jacqueline, due to medical
recommendations, would not let him touch nor grab a pencil.
While Nice still swarned with people on their terraces and Picasso now
rested in his bed after the lengthy lunch and its night, the friends, Luis
Miguel among them, started running around frantically, looking for the
empty bottle with Picasso’s name on it which he had urged to rescue:
“That will be for me”, he said “an unforgettable reminder of this day, and I
will always enjoy seeing my name on the bottle.”

Esta uva es una variedad no aromática de los valles de Moquegua
y Tacna, posiblemente la más antigua de las variedades traídas por
los españoles. Tiene bayas que van de los tonos violeta-rojo al rojo
azul, irregularmente coloreadas, redondas, de tamaño mediano, con
racimos en forma cónica y de abundante producción. Produce Piscos
muy agradables y estructurados en boca, de sabores amables y bien
constituidos, con muy buena persistencia. En nariz evocan ligeros
aromas a verde y pasto recién cortado.
This grape is a non-aromatic variety from the Moquegua and Tacna
valleys. It is possibly the oldest of the varieties brought to Peru by
the Spanish. It has berries that range from tones of red-violet to redblue, irregularly colored, round, of a medium size, in cone shaped
clusters and produces abundant fruit. The grape produces Piscos
that are very pleasant and structured in the mouth, with enjoyable and
well constituted flavors, with a very good persistence. In the nose the
grape evokes light aromas of green, and recently cut grass.

Dictado por el Centro de Investigación Vitivinícola de la Universidad
Nacional Agraria de La Molina en coordinación con el Consejo Regulador
de la Denominación de Origen Pisco
The course was taught by the Centro de Investigación Vitivinícola at
the Universidad Nacional Agraria de La Molina in coordination with the
Regulatory Council of the Denomination of Origin, Pisco.
El curso consistió en tres etapas la primera dictada por el Dr. Milber
Ureña, fundamentos de la evaluación sensorial, protocolo de prueba
de reconocimiento de olores, reconocimiento de sabores básicos:
dulce, ácido y amargo. La segunda etapa estuvo a cargo del Ing. Juan
Carlos Palma que nos enseñó los requisitos fisicoquímicos y sensoriales
del Pisco según el nuevo reglamento de la Denominación de Origen,
descriptores y perfil sensorial de Piscos quebranta, mollar, negra criolla,
uvina, italia, torontel, moscatel, albilla y mosto verdes y acholado,
además todo sobre la OIV Norma para Concursos Internacionales de la
Organización Internacional de la Viña y el Vino.
The course consisted of three parts. The first was taught by Dr. Milber
Ureña, and discussed the foundations of the sensory evaluation, protocol
for the test and recognition of smells, recognition of basic flavors: sweet,
sour and bitter. The second part was taught by Engineer Juan Carlos
Palma who discussed the physicochemical and sensory requirements of
Pisco, according to the new rules for the Denomination of Origin, as well
as the descriptors and sensory profile of quebranta, mollar, negra criolla,
uvina, italia, torontel, moscatel, albilla and mosto verde and acholado
Pisco varieties. He also taught about the OIV Regulation for International
Competitions of the International Organization of Vine and Wine.
La 3ra parte estuvo a cargo del historiador Lorenzo Huertas que realizo
una charla magistral de la Historia del Pisco, en suma un excelente curso
que no deberían perderse los Sommeliers, Bartenders, Especialistas
y Catadores de Pisco, Chef’s, Ingenieros Alimentarios, Productores,
Agrónomos, Entusiastas de nuestro destilado de bandera.
The third part of the course was led by historian Lorenzo Huertas who gave
a masterful talk on the History of Pisco. It was in summary an excellent
course that Sommeliers, bartenders, specialists and Pisco tasters,
chefs, food processing engineers, Pisco producers, agronomists, and
Pisco enthusiasts should not miss.

La pintura perdida del Bank

El Bank Exchange and Billiard Saloon de San Francisco, California, lugar
donde se creó el Pisco Punch, fue cofundado en 1853 por John Meiggs,
hermano de Enrique, poco antes que ambos emigren a Sudamérica
para contribuir en la historia de la ferrocarrilería peruana y de otros países.
Unos años después, el saloon pasó a las manos de George Parker, un
buen conocedor de arte que lo adorna con pinturas al óleo importadas
de Europa. Entre estas pinturas se encontraba una de gran tamaño, de
Sansón y Dalila, que luego se convertiría en ícono del establecimiento.

The Bank Exchange and Billiard Saloon of San Francisco, California, the
place where the Pisco Punch was created, was cofounded in 1853 by
John Meiggs, brother of Enrique, shortly before both brothers emigrated to
South America in order to contribute to the history of Peruvian railways, as
well as that of other countries.
A few years later, the saloon passed into the hands of George Parker, an art
connoisseur. He adorned the walls with oil paintings imported from Europe.
Among these paintings there was a large one, of Sampson and Delilah,
which later became an icon of the establishment.
During that period of time, the Bank Exchange was the meeting space for
the most powerful people of the city. In fact, its name was derived from the
fact that the first transactions of the stock exchange took place there. The
Exchange raised the spirits of its patrons with a large amount of available
drinks, among them Pisco (Figures 1, 2 and 3).

En esa época, el Bank Exchange era el centro de reunión de la gente
más poderosa de la ciudad. Es más, su nombre deriva del hecho de
que las primeras transacciones de la bolsa de valores se realizaban allí
y elevaban los espíritus con la gran cantidad de bebidas disponibles,
entre ellas el Pisco (Figuras 1, 2 y 3).

22. Uno de sus visitantes regulares era un joven reportero llamado Samuel
Clemens, el cual luego cambiaría de nombre a Mark Twain y se convertiría
en uno de los más afamados escritores estadounidenses (Figura 4). Twain
escribió un artículo para un periódico donde detalló la escena de la pintura
de una manera sarcástica.

En 1876, el saloon cambia de dueño y la pintura es rematada. La compra
otro de sus asiduos visitantes regulares, el futuro senador Milton S. Latham
por la cantidad de $10,500, un monto considerable para la época.
La historia conocida termina ahí, hasta que el Autor encontró una pista
en un artículo publicado en 1889 donde se indicaba que la pintura había
pasado a las manos de un tal Haquette, que la colocó en su local en la
calle Kearney (Figura 5).
Todo apuntaba a pensar que la pintura se destruyó durante el voraz
incendio de 1906, ya que esa calle quedó totalmente destruida, pero
afortunadamente se descubrió que la pintura fue donada antes a un
museo localizado fuera de la zona del desastre.
Luego de varias pesquisas se supo que el museo la vendió a un colector
privado anónimo años atrás, pero no sin antes tomar una reproducción
fotográfica, la cual con mucho agrado se publica aquí por primera vez
(figura 6). No hay mejor manera de analizar la pintura que como lo hizo
Mark Twain en su artículo de 1864, tal vez con una copa de buen Pisco en
la mano ¡Salud!

23. El Pisco en el Mundo / Pisco around the world
One of the regular visitors was a young reporter named Samuel Clemens,
who would later change his name to Mark Twain and would become one
of the most famous American writers (figure 4). Twain wrote an article for
a newspaper where he sarcastically described the scene of the painting.

In 1876, the Saloon changed owners and the painting was sold. One of the
devoted regular visitors purchased it (future senator Milton S. Latham) for
the amount of $10,500, a considerable amount for this time period.
The history ended there, until this author found another clue in an article
published in 1889 where it was indicated that the painting had passed into
the hands of a man named Haquette, who hung it at his locale on Kearney
Street (Figure 5).
Everything signaled that the painting had been destroyed during the fierce
fire of 1906, since this street was totally destroyed. However, fortunately it
was discovered that the painting was donated prior to the fire to a museum
outside of the distroyed zone.
After many inquiries, it was discovered that the museum sold the painting
to an anonymous private collector, but not before a photo reproduction was
taken, which we are proud to publish here for the first time (Figure 6). There
is nothing better than to analyze the picture as Mark Twain did in his 1864
article, perhaps with a glass of good Pisco in his hand. Cheers!

Jauja, variación de la palabra quechua Hauca que significa Lugar
apacible, plácido, tranquilo. En la época pre incaica fue sede de
la confederación Xauxa – Huanca y su capital administrativa la
ciudadela de Tunanmarca. En el Tahuantinsuyo abarcó el Hatun
Xauxa y parte del Hurin Huanca y en la época de la conquista fue
fundada por Francisco Pizarro como Capital de Nueva Castilla el 25
de abril de 1534. Fue un asentamiento de españoles en la época
colonial y gracias a ser un lugar mítico de riquezas se le denominó
“País de Jauja”.

Jauja, ciudad típicamente colonial con edificaciones de dos pisos
con amplios portones, ventanas y balcones de madera con techos
de tejas a dos aguas, se caracteriza por sus festividades religiosas,
coloridas danzas, bellos paisajes naturales y por su excelente clima,
razón por la cual en el siglo XIX se recomendaba venir a esta ciudad
para curarse de los males respiratorios y desde lejanos lugares iban
a Jauja importantes personajes de la sociedad internacional para
curarse, lo que propició la construcción del hospital Olavegoya, que
inspiró una novela sobre estos sucesos titulada “La Ciudad de los
Tísicos”, de Abraham Valdelomar.
La Plaza Principal de Jauja muestra una pileta central construida
en metal fundido, con bellos jardines alrededor, dos glorietas a los
costados debajo de las cuales se han instalado servicios higiénicos.
En la parte frontal se observa el monumento a Don Andrés Avelino
Cáceres, un busto en homenaje a Francisco Bolognesi y una
estatua pequeña que representa una campesina con su niño.
En los alrededores se encuentran la Iglesia Matriz, la Municipalidad
Provincial, el INC, bancos, casas de estilo colonial, establecimientos
comerciales entre otros. Celebra su fiesta patronal el 1er domingo
de octubre en homenaje a la virgen del Rosario y a la Mamallanchic
Chapetona.

Al fundarse la ciudad de Jauja, el 25 de abril de 1534, el conquistador
Pizarro asigna el lugar para la construcción de la futura iglesia, la
misma que se ubica frente a la plaza principal de la ciudad. Su
construcción es monumental, con rasgos romanos por su plano.
Su altar mayor está bellamente tallado al estilo churrigueresco y
dedicado a la Virgen de Rosario. Cuenta además con un púlpito
tallado en madera y altares laterales de diferentes estilos. La cúpula
de la iglesia se encuentra decorada con pinturas en loza.

Jauja, variation of the Quechua word
“Huaca” which means…
Jauja, variation of the Quechua word Huaca which means peaceful,
placid, quiet place. In the pre-Inca period it was the seat of the
Xauxa-Huanca confederation and was the administrative capital of
the city of Tunanmarca. In the Tahuantinsuyo period it stretched from
Hatun Xauxa and part of Hurin Huanca, and in the period of the
Conquest it was founded by Francisco Pizarro as the Capital of the
New Castille on April 25, 1534. It was a settlement for Spaniards
during the colonial period, and thanks to its location as a mythic
place of riches, it was called the “Country of Jauja.”
Jauja is a typical colonial city with two storey buildings, wide doors,
windows and balconies made of wood, and peaked-tiled roofs.
The city is characterized by its religious festivals, colorful dances,
beautiful natural landscapes, and by its excellent climate. In the
18th Century it was recommended to visit the city to cure oneself
of respiratory problems; important people from international society
and from distant places went to Jauja to be cured, which caused the
construction of the Olavegoya hospital. A novel about these events,
titled “The city of the Tisicos” was written by Abraham Valdelomar.
The principal plaza of Jauja has a central fountain constructed of
molded metal, with beautiful gardens surrounding it, two squares
to the sides and under which public restrooms have been installed.
In the front part of the plaza there is a monument to Don Andrés
Avelino Cáceres, a bust in honor of Francisco Bolognesi, and a
small statue that represents a farmwoman and her child.
In the surrounding area there is the Matriz Church, the Provincial
Municipality, the INC, banks, colonial style houses, commercial
establishments, and other buildings. The 1st Sunday of October is
the celebration of the Patron Festival in honor of the Virgin de Rosario
and Mamallanchic Chapetona.

When he founded the city of Jauja on April 25, 1534, Pizarro

26. Las torres se construyeron en distintas épocas y con respecto a las
campanas, la más grande, se dice que fue fundida en el Convento
de Ocopa con las joyas de oro de las más ricas linajudas de Jauja
y su tañido se escucha a 5 leguas a la redonda. En la iglesia
también se encuentran antiguos órganos de tubos de fabricación
italiana. Celebra su Fiesta Patronal el 1er domingo de octubre.
Fue remodelada en 1935, añadiéndole una bóveda a la nave de
concreto y las alas laterales. El presbiterio cuenta con 3 hermosos
retablos del siglo XVIII.
the biggest is said to have been made in the Ocopa Convent with
golden jewels of the highborn women of Jauja. Its pealing can be
heard up to five leagues away. In the church there are also old
Italian-made pipe organs. The celebration of the Patron Festival is
the first Sunday of October. The church was remodeled in 1935, with
a dome added to the nave and the side wings. The presbytery has
three beautiful paintings from the 18th Century.
Capilla Cristo Pobre
The Capilla de Cristo Pobre was ordered to be built by the French
priest Luis Grandin sometime between the years 1920 and 1928,
and was the first chapel built with noble material in the city of Jauja.
Its exterior is a smaller scale replica of the famous gothic style
cathedral: the Notre Dame of Paris. One can observe just one nave,
the altar, the pulpit and the confessional are all made of artistically
carved wood. The church is decorated with paintings brought
from France that represent the Stations of the Cross. The altar is
dedicated to the Virgin of the Miracles. It has two towers and each
one of them has six points; together they represent the 12 apostles.
At the center of the church there is a statue of Jesus.
La Capilla de Cristo Pobre fue mandada a construir por el sacerdote
francés Luis Grandín entre los años de 1920 - 1928 y fue la primera
capilla construida con material noble en la ciudad de Jauja.
Su fachada es una réplica en menor escala de la famosa capilla de
estilo gótico - ojival de Notre Dame de París. Al interior se puede
observar una sola nave; el altar, el púlpito y el confesionario han
sido elaborados en madera artísticamente tallada. Se encuentra
adornada con cuadros traídos desde Francia que representan el
Vía Crucis. El altar está dedicado a la Virgen Milagrosa
Cuenta con dos torres y cada una de ellas concluye en seis puntas
representando a los 12 apóstoles. Al centro se encuentra una
estatua de Jesús.

Private Museum: El Caminante
El Museo Particular El Caminante pertenece al Profesor Enoch
Loayza Espejo, integrante del Círculo Cultural Julio Espejo Núñez.
Alberga en su interior variadas muestras de fósiles de plantas y
animales, sobre todo de especies marinas oriundas de este valle
como trilobites, gasterópodos, amontes, un pez fosilizado y un
quinual.

The Private Museum El Caminante belongs to Professor Enoch
Loayza Espejo, member of the Julio Espejo Núñez Cultural Circle.
Inside the museum there are various exhibits of plant and animal
fossils, above all marine species that are native from this valley,
such as trilobites, gastropods, amontes and a fossilized fish and
a quinual.

como cantaros, vasijas, morteros, illas y una figura, que algunos
estudiosos indican es el antecesor del Huacón.
There are also ancient and valuable ceramic pieces such as pitchers,
vases, mortar and pestles, and a figure which some studies indicate
is the predecessor of the Huacon.
El Museo viene funcionando alrededor de 10 años, siendo atendido

in a semi-circular form. The district of Sausa or Xauxa, where the
monument is located, is very important in the history of the Mantaro
Valley. That is where the Xauxa archeological site is found, an
important cultural point for the valley and was an Incan Administrative
Center. The Xauxa Church has not been modified and maintains its
original construction of adobe. It also has paintings in the interior that
belonged to the Cuzqueña school of art.
Laguna de Paca
The Laguna de Paca (Paca Lagoon) is located in the natural Quechua
region, and is about 6km2. It is flanked by the Eastern Cordillera,
which when seen from the other side of the lagoon seems to be the
figure of a man lying down. The locals call it the “Sleeping Indian.”
Dentro de la laguna encontramos islas flotantes de totora, la más
grande de ellas llamada “isla del amor”. Sus cristalinas aguas tienen
una temperatura de 12°C y una profundidad promedio de 22 mt.
Se encuentra rodeada por los distritos de Paca, Pancán y Chunán.
Entre las especies forestales encontramos eucaliptos, sauces
y cipreses y como vegetación natural se encuentran la totora,
y gramíneas, también se puede observar crianza de vacunos y
ovinos principalmente. Las especies representativas de la fauna
son gaviotas, Martín pescador, pato zambullidor, garzas, paca
paca (ave mediana de color negro que se esconde por la totora),
huachuas, entre otras. Las actividades económicas principales que
se realizan alrededor de la laguna son la agricultura y la prestación
de servicios turísticos como alimentación, hospedaje y paseos en
bote.
Inside the lagoon there are floating reed islands, the biggest of which
is called the “island of love.” The lagoon’s chrystal clear waters have
a temperature of 12°C and the lagoon is some 22 meters deep. It is
surrounded by the districts of Paca, Pancán and Chunán.
Among the plant species there are eucalyptus trees, willows and
cypress trees. As for natural vegetation there is the reed used to
make the floating islands, grasses and one can observe the raising
of sheep and cattle. The species that represent the local fauna
are gulls, kingfisher, gadwall ducks, herons, paca (a small black
bird that hides in the reeds), huachuas and others. The principal
economic activities that take place around the lake are agricultural
activities as well as touristic services, such as restaurants, hostels,
and boat rides.

Sitio Arqueológico de Siquillapucara o Tunanmarca
Tunanmarca or Siquillapucara Archeological Site
Tunanmarca significa Pueblo en la punta del cerro y viene de dos
voces quechuas: Tunan = punta del cerro y Marca = pueblo.
También se le conoce como Siquillapucara que significa Fortaleza
de Siquilla.
Tunanmarca means “town on top of the mountain” and comes from
two quechua words: Tunan = top of the mountain and Marca =
town. It is also known as Siquillapucara, which means the Siquilla
Fortress.
Entre los años 600 – 1000 d.C. se produce la invasión Wari y el
año 1100 la invasión Yaru. Debido a esto los Wanka – Xauxas se
organizan militarmente y construyen viviendas en las cumbres de
los cerros. Entre 1000 y 1500 d.C. sufren la invasión Inca siendo
sitiados y sometidos.
Sometime between the years 600-1000 AD the Wari invaded the
area followed by the Yaru in the year 1100. Due to this, the Wanka-Xauxas became organized militarily and built houses on the tops of
the mountains. Between 1000 and 1500 AD they were besieged by
the Incas and succumbed to their power.

extensión de 2,000 m de largo por aprox. 400 m de ancho. En este
lugar se han contabilizado hasta 3,000 viviendas de piedra y barro,
la mayoría de ellas de base circular, 3 m de diámetro y 2 m de
alto en promedio, que significarían unos 12 a 15 mil habitantes.
No fue un lugar de residencia permanente. Presenta cuatro tipos
de viviendas: del pueblo, religioso, militar y de la nobleza. Cuenta
con avenidas que ingresan por el Este y Oeste a la plaza principal
que se encuentra flanqueada por muros. Las calles son pasadizos
angostos que al seguir se pierden o en algunos casos conducen a
una calle sin salida.
The remains are protected by three walls. They are 2000 meters long
and approximately 400 meters wide. More than 3000 houses made
of stone and mud have been counted, the majority of them in a
circular form. They are on average, 3 meters wide and 2 meters tall,
which implies some 12,000 to 15,000 inhabitants. It was not a place
of permanent residency. There are four types of buildings: common,
religious, military and nobility. There are avenues that enter from the
West and the East to the principal plaza which is surrounded by
walls. The streets are small hallways that if one were to follow them,
one would get lost, or in some cases be led to a dead end.

Acaya, palabra quechua que significa “Vaso de metal”, es un
pequeño asentamiento humano localizado en la región quechua
(límite con Suni), donde se encuentra un manantial de aguas
termales contiguo al río Mantaro, que contienen azufre, cloro,
carbonato, entre otros minerales. Tiene una temperatura de 34°C.

Los baños termales constan de dos instalaciones, una de ellas al
aire libre, de 12 m de largo x 5 m de ancho, que es el lugar donde
brotan las aguas y que se había acondicionado como piscina,
actualmente sin mantenimiento.
A unos 200 m se encuentra una construcción que tiene 2
habitaciones cerradas y techadas. Al interior se han construido dos
pozas privadas (una en cada habitación), de material noble de 3.5
m x 3.5 m. Es hacia ellas que se canalizan las aguas termales.

Acaya, a Quechua word that means “Metal Glass” is a small human
settlement located in the Quechua region (bordering Suni) where
there is a warm-water spring that is contiguous to the Mantaro River.
The spring contains sulfur, chlorine, carbonate and other minerals.
The water has a temperature of 34°C.
The thermal baths consist of two installations; one of them in the
open air (12 meters long by 5 meters wide), which is the place
where the water rises from the ground. It is conditioned to be like a
pool, but is currently not maintained.
Some 200 meters away there is a second construction that has two
closed and roofed rooms. Inside there are two private pools (one in
each room) and each room is about 3.5m by 3.5m. The waters are
brought in channels to these pools.

Chinese migration to Peru
and the arrival of rice
La llegada del arroz empieza con la historia contemporánea de la
voluminosa inmigración de los chinos que se inicia el año 1849,
ya que esta llegada masiva de 90,000 chinos culíes hasta 1874
hizo que se concentrara una gran fuerza laboral. Gran parte de
esta fuerza laboral fue destinada a las haciendas costeñas, pues
estuvieron obligados a trabajar durante 8 años. Además, también,
trabajaron como servidumbre en las ciudades, principalmente, en
Lima, en las islas guaneras y en la construcción de ferrocarriles (i)

The arrival of rice to Peru begins with contemporary history and the
voluminous Chinese immigration, which began in 1849. The massive
arrival of 90,000 Chinese immigrants until the year 1874 resulted in the
concentration of a huge labor force. A large part of this work force was
destined to work in the costal haciendas, where the immigrants were
forced to work for 8 years. The Chinese also worked as servants in cities,
especially in Lima, in the guano islands, and also in railroad construction.
Por un lado, estos chinos culíes en su diaria alimentación y como
parte de pago necesitaban arroz, pues los hacendados estaban
obligados abastecer cada día con una cantidad fija de arroz como
parte de su pago por el trabajo que realizaban en sus propiedades
agrícolas. Por lo tanto, parte de las obligaciones de los hacendados
era encontrarse abastecidos con grandes cantidades de arroz.
Evidentemente este diario requerimiento ha sido novedoso para el
Perú, ya que había que ir conformando una manera de comercializar
este producto como, también, el surgimiento de casas comerciales
importadoras de arroz, pues en ese entonces el Perú no producía
On one hand, the Chinese needed rice for their daily diet, as well as a
form of payment. The landowners were obligated to supply a daily, fixed
amount of rice as part of payment for the work the Chinese did on their
agricultural properties. Therefore, part of the obligations of the landowners
was to make sure they had enough rice (and in large quantities) stocked.
Obviously this daily requirement was something new for Peru, and the
country began to commercialize this product, as well as the surge of
commercial rice-importing houses. Before this point in time, Peru did not
produce this grain.

De los párrafos anteriores, se colige que el arroz empieza a
expandirse y empiezan a aparecer los restaurantes dedicados a
la preparación de comidas con arroz, que en la actualidad es un
producto que acompaña, en su mayoría, a la comida peruana. Por
tanto, es un producto de gran demanda nacional cuya producción
se ha incrementado, pero en detrimento de productos peruanos
más nativos como la oca, mashua, kiwicha.
En conclusión, desde la llegada del arroz al Perú, la gastronomía
peruana se ha modificado creando comidas al gusto de su paladar,
ya que el arroz, es el ingrediente principal de muchos platos y
postres peruanos.

From the previous paragraphs, we can infer that rice began to expand
and appear in restaurants dedicated to the preparation of meals with rice,
which today is a side dish that is almost always served with Peruvian food.
Therefore, it is a product of high national demand, whose production has
increased over the years. However, this has occurred to the detriment of
native Peruvian products such as the oca, mashua and kiwicha.
In conclusion, since rice first came to Peru, Peruvian cuisine has changed,
creating meals that combine well with rice, since rice is today the principal
ingredient of many Peruvian dishes and desserts.

3 tazas de arroz cocido
1/2kilo de carne picada muy chiquita
1 cebolla picada finamente
1 ajo molido
1 cucharadita de pimentón o paprika
Aceite
2 huevos duros picados
50 gramos de pasas
6 aceitunas de botija picadas
1 tomate pelado y picado
Pimienta una cucharadita
2 cucharadas de perejil picado
Sal al gusto
Plátanos para flambear y decorar
Pisco quebranta para resaltar el sabor
Preparación:
Sabemos que el arroz es cocido, bueno
haremos el relleno de la siguiente manera: En
una sartén echar aceite, freír la carne hasta
que este dorada, echar la cebolla, el ajo, el
ají picado sin venas ni pepas, el pimentón o
paprika, flambear con pisco para resaltar el
sabor, echar el tomate, la pimienta, la sal, al
gusto. Una vez cocido retirar del fuego y echar
las pasas, el huevo duro picado y las aceitunas,
también picadas moviendo para que se unan
con el aderezo del relleno. Al final cocinar unos
plátanos en mantequilla y flambear con pisco
espolvorear azúcar.

Modo de Presentación:

Servir en moldes individuales. Al molde se le
unta un poquito de aceite o agua para que
se desmolde con facilidad, se pone primero
una capa de arroz aprisionado al molde,
luego echar el relleno y nuevamente otra
capa de arroz aprisionando para que no se
desmorone, desmoldar sobre el plato y decorar
espolvoreando el perejil picado sobre el arroz.
Disponer los plátanos alrededor del plato.

Ingredients:
3 cups of cooked rice
½ kilogram of finely chopped beef
1 finely chopped onion
1 garlic clove, finely minced
1 teaspoon paprika or cayenne pepper
Oil
2 hardboiled eggs, chopped
50 grams of raisins
6 olives, chopped
1 tomato, peeled and chopped
1 teaspoon of pepper
2 teaspoons of chopped parsley
Salt, to taste
Bananas flambé
Quebranta Pisco, for flavor
Preparation:
Since the rice is already cooked, we will make
the filling first. Heat oil in a frying pan, add the
beef until browned, add the onion, garlic, the
paprika or cayenne pepper, flambé with Pisco
for added flavor. Add the tomato, and salt and
pepper to taste. Once everything is cooked,
remove from heat and add the raisins, the
chopped hardboiled egg and olives. Stir well in
order to mix all the ingredients thouroughly.
Serve in individual molds. Before filling, line the
mold with a little oil or water in order to easily
remove the rice mixture. First fill with a layer of
rice by pressing it into the mold. Then add the
filling. Add another layer of rice (press it firmly
in order to prevent it from falling apart). Place
the mold on a plate, and remove. Decorate with
chopped parsley.
Cook some bananas, and then flambé with
pisco and sugar to decorate the dish.

Algo de Historia…
Suspiro a la limeña
Los orígenes del postre se dan a mediados del siglo XIX en la
ciudad de Lima, Perú, sin embargo tiene una clara influencia
islámica. El primer dato que se tiene respecto a su elaboración
se encuentra reseñado en el Nuevo Diccionario Americano de
Cocina del año 1868 bajo el nombre de Manjar Real del Perú.
La historia de su elaboración se inicia con la esposa del poeta
José Gálvez Barrenechea, llamada Amparo Ayarez, quien ideó la
receta. El poeta bautiza el postre porque es suave y dulce como
el suspiro de una mujer, así se conoce como suspiro de limeña
La base de su elaboración es el manjar blanco (o menjar blanc)
que es un genérico que se remonta a las culturas medievales. El
manjar blanco llegó procedente de España al Perú. Se presentaba
como una crema espesa compuesta de leche, almendras y
azúcar; de unos ingredientes de origen árabe e ibérico.
El manjar blanco así descrito, fue considerado un plato que la
cocina medieval española aportó a Europa. En Francia fue recogido
como “mangier Blanc”, en Italia se llamó “Blanc mangieri”.
En el Perú se conocieron dos versiones del menjar blanc: la del
manjar blanco con pechuga de gallina y azúcar y espesado con
harina de arroz; y el manjar blanco sin pechuga de gallina con sólo
azúcar y harina, de donde nació el Suspiro de Limeña.
El otro elemento del Suspiro de Limeña es el merengue, postre
también traído al Perú por parte de los españoles. En España se
conoce como Suspiro un postre elaborado a base de merengue,
de donde se entiende el origen del nombre al ponerle al tradicional
suspiro un poco de originalidad.
Este postre es consumido principalmente en la ciudad de Lima
aunque también en las demás ciudades del Perú y ciertos países
limítrofes. En los últimos años, debido a la internacionalización
de la gastronomía peruana, el consumo del postre se ha ido
extendiendo a otros países del mundo donde los peruanos han
emigrado y abierto restaurantes.

A little history…
“Suspiro a la limeña”
The “suspiro de limeña,” also known as the suspiro limeño or the
suspiro a la limeña, is a traditional dessert of Peruvian cuisine that
originates from the Peruvian capital of Lima.
The origins of the dessert began in the middle of the 19th Century
in the city of Lima, Peru; however, it has a clear Islamic influence.
The first information that we have in regard to the production of
the dessert is summarized in the “New American Dictionary of
Cooking” from the year 1869, under the name of Manjar Real del
Perú.
The story of its production began with the wife of the poet
José Gálvez Barrenechea, also known as Amparo Ayarez, who
invented the recipe. The poet named the dessert “because it is
smooth and sweet like the sigh of a woman,” therefore today
it is known as the “sigh of the woman from Lima,” or suspiro de
limeña.
It is made with a base of manjar blanco (also known as menjar
blanc or dulce de leche) which dates back to the medieval
cultures. Manjar blanco came to Peru from Spain. It was presented
as a thick cream made of milk, almonds and sugar; ingredients
of Iberian and Arab origin.
Manjar blanco, as it is described above, was considered to
be a medieval dish that the Spanish contributed to the rest of
Europe. In France it was called mangier blanc,” and in Italy “Blanc
mangieri.”
In Peru there were two versions of menjar blanc: one with manjar
blanco and chicken breast, with sugar and thickened with rice
flour; and the other with manjar blanco without the chicken, and
only with sugar and flour. From the second version is where the
Suspiro de Limeña was born.
Another element of the Suspiro de Limeña is the meringue, a
dessert also brought to Peru by the Spanish. In Spain a dessert
known as “Suspiro” is made with a base of meringue. We can
understand that the name of the Peruvian dessert derives from
combining some creativity with the traditional “sigh” from Spain.
This dessert is consumed principally in the city of Lima, although
other cities in Peru also consume it, as well as a few countries that
border Peru. Over the past few years, due to the internationalization
of Peruvian cuisine, the consumption of the dessert has extended
to other countries around the world, especially where Peruvians
have emigrated and opened restaurants.

La receta tradicional de este postre es para
aproximadamente 6 a 8 personas.
Ingredientes para
el Merengue:
1 taza o 200 g de azúcar
180gr de claras
Unas gotas de Pisco aromático ( Torontel )
Ingredientes para
el manjar blanco:
1.5 taza de oporto
Para decorar: Canela en polvo
1 lata de leche condensada (1 ¼ taza). Se
puede reemplazar por una lata de leche
evaporada con 150 g de azúcar
1 lata o 1 3/4 de taza de leche evaporada
1 ramita de canela
5 yemas
1 cucharadita de vainilla
Preparación:
Poner las leches en una olla con la canela y
llevar a cocinar moviendo hasta que se forme
un manjar blanco espeso. Si no hay leche
evaporada hacer un manjar blanco de leche
fresca y azúcar (3 tazas de leche fresca por 2 ¼
tazas de azúcar).

Entibiar

Agregarle las yemas coladas y la vainilla.
Enfriar ligeramente.
Vaciar en una dulcera o en copas individuales.
Hacer un almíbar a punto de hebra con una taza
de azúcar y el oporto.
Batir las claras a punto de nieve e ir agregando
lentamente el almíbar, de la misma manera
como se hace el merengue italiano.
Seguir batiendo hasta que enfríe.
Decorar las copas con el merengue y
espolvorear canela.

Suspiro a la
limeña
The traditional recipe of this dessert, which serves
approximately 6 to 8 people, is the following
Ingredients
For the Meringue:
1 cup or 200 grams of sugar
180 grams of egg whites
A few drops of aromatic Pisco (we recommend
Torontel)
Ingredients
For the “manjar
blanco”:
1.5 cups of port
Decoration:
Cinnamon
1 can of condensed milk (1 ¼ cup). (A can of
evaporated milk with 150 grams of sugar will
substitute the condensed milk).
1 can or 1 ¾ cup of evaporated milk.
1 cinnamon stick
5 egg yolks
1 teaspoon vanilla
Preparation:
Put the milk in a pan with the cinnamon. Cook
over low heat until a thick “manjar blanco” or
dulce de leche is formed. If you do not have
evaporated milk, you can make manjar blanco
by substituting 3 cups of fresh milk and 2 ¼
cups of sugar.
Add the egg yolks and the vanilla. Let cool
slightly. Place into individual cups or a dessert
mold.
Make syrup out of a cup of sugar and port, until
it is in the thread stage
Beat the egg whites into peaks. Slowly add the
syrup and make a meringue (same process as
making an Italian meringue). Continue to beat
until cool.
Decorate the cups with the meringue and
sprinkle cinnamon on top.

ice until about ¾ the way full. Later add
the Pisco which has been soaked in lime
peel, the fresh lime juice, the angostura
bitters, an optional ¼ ounce of cane
syrup. Fill the rest of the glass with ginger
ale. Decorate with slices of lime inside
the glass, and a small fresh sprig of mint.
Stir and serve with a smile.

de 25 a 30 segundos, hasta que obtengamos una mezcla
muy uniforme y compacta, luego servimos, en una copa pera
o vaso bastante decorativo long drink de 12 a 14 onzas de
capacidad, decoramos con 2 sorbetes , o1 cereza y alguna
fruta colorida encima del vaso y a beber con mucho gusto.

Decorate with the aguaymanto and its peel, forming a
beautiful flower on the edge of the glass. Finally, top
with a dusting of white chocolate and enjoy this noble

Don Jorge Chamot Arróspide (1891-1966), ocupó varios importantes cargos
públicos durante su vida. En 1920 fue miembro de la comisión peruana que
viajó a Ginebra a fundar la Liga de las Naciones, organización precursora de las
Naciones Unidas, cuyo origen estuvo en el Tratado de Versalles con el que se
selló la Primera Guerra Mundial con el fin de lograr la paz mundial; en la década
de 1920 fue representante del Puerto del Callao en Panamá a los pocos años
de haberse abierto el Canal; Posteriormente, dirigió, como había dirigido su
padre antes que él, la Aduana del Callao.
Mr. Jorge Chamot Arróspide (1891-1966), held, during his life, several
important government posts. In 1920 he was a member of the Peruvian
Mission which traveled to Geneva to establish the League of Nations
predecessor organization of the United Nations, the origen of which was the
Treaty of Versailles after the First World War and intended to secure world
peace. In the twenties he represented the Port of Callao in Panama, shortly
after the opening of the Panama Canal. Later he was, as his father had been
before him, the Manager of the Customs office of Callao.

En su carta Chamot se refiere a un artículo aparecido en ese diario sobre
los avances efectuados por el Ing. Riconte para apoyar la exportación de los
vinos y aguardientes peruanos, y a la sugerencia de que la Embajada en los
Estados Unidos hiciese gestiones para impedir que se use el apelativo “Pisco”
para aguardientes que no proviniesen del Perú.
In his letter he refers to an article published in that same newspaper dealing
with the advances made by Mr. Riconte to endorse the export of Peruvian
wines and spirits, and his suggestions in the sense that the Peruvian
Embassy in the United States should take the necessary steps to avoid the
use of the name Pisco for spirits not coming from Peru.
Aclara en su carta Chamot, que en la misión que desempeñó en Washington
ante el Departamento de Estado norteamericano, se ocupó justamente del
tema del pisco y su denominación de origen. En su carta traduce el texto de lo
comunicado a las autoridades estadounidenses de ésta manera:
Chamot made it clear in his letter to “El Comercio” that his mission in
Washington was meant to explain to the American Department of Estate
details about Pisco and the origin of its name. In his letter he translated the
text of his exposure to the american authorities as follows:
sobre este particular debe hacerse hincapié que espíritus
importados de otros países están usando el nombre “Pisco”
que es producto exclusivamente peruano ya que el único
Pisco genuino se produce en el área que rodea al puerto de
Pisco en el Perú.”
Si bien la limitación geográfica indicada por Chamot no se adecua al territorio
autorizado a producir pisco actualmente, su referencia al puerto de Pisco,
fuente del nombre y base para la denominación de origen peruana está
claramente especificada.
Como buen peruano descendiente de próceres de la independencia Jorge
Chamot Arróspide tenía especial cariño por nuestro patrimonio y lo defendió
en los diferentes foros en los que le todo actuar. Además era bisnieto de
don Alejo Hurtado de Mendoza y doña Isabel Fernández Prada, ambos
pertenecientes a antiguas familias relacionadas a los viñedos y a la producción
de vinos y aguardientes en Ica y Moquegua.

with the territory authorized to produce Pisco now-a-days, his reference to the
port of Pisco, source of the name and base for the Peruvian Denomination of
Origen, is clearly specified.
As a good Peruvian, descendent of heroes of the independence, Jorge
Chamot Arróspide had a especial love for our heritage and defended it in the
several positions where he had the opportunity to do so. Besides that he
was the great grandchild of Alejo Hurtado de Mendoza and Isabel Fernandez
Prada, both belonging to old families related to vineyards and the production
of wine and Pisco in Ica and Moquegua.
It was this family backing what made his viewing, since his early days, of the
need to protect pisco’s name as a Peruvian product both for legal reasons
and recognition to the men and women that in Peru had dedicated their lives
to produce and improve this unique spirit, as well as for the economic future
that it could bring to our country and the people who, like him were able to
recognize its possibilities.

necesidad de proteger la peruanidad del pisco tanto por motivos de justicia
y reconocimiento a los hombres y mujeres que en el Perú se dedicaron a

from other countries are using the name “Pisco” which is a
exclusively Peruvian product since the only genuine Pisco

Institute of Wine and Pisco (IDVIP as abbreviated in Spanish). We come

Es valorar los productos por lo que son, desde un punto de vista meramente
organoléptico, de forma comparada a otros productos similares. Probar las
cosas sin ser influenciado por su reputación, por su fama o por la marca.
It is the valuing of products for what they are, from a purely sensory
perspective, and their comparison to similar products. It is the tasting of
things without the influence of reputation, fame or brand.
La idea de la cata ciega es muy interesante. Y esto por varios motivos:
The idea of a blind tasting is very interesting, and for various reasons:
En primer lugar, porque los catadores son influenciables, y eliminando
información exógena se evita que en la valoración del Pisco exista un
Componente espureo (no relacionada con la calidad intrínseca del
producto).
First, because tasters can be influenced, and by eliminating exogenous
information, we avoid that the value of Pisco be related to a component
which is not related to the intrinsic quality of the product.
En segundo lugar, porque permite al catador concentrarse en lo realmente

en Noches de Cata?
How do we do blind tasting
during Pisco Tasting Nights?
Se entregan las muestras a una persona que no es catadora y las lleva a
un cuarto contiguo de donde se va a realizar la cata, numera la muestras
de acuerdo a su criterio, luego se sirve cada una de las copas de
izquierda a derecha, mientras los catadores han pasado a otra habitación.
Cuando termina se nos invita a pasar a la sala, la única que conoce la
numeración de las muestras es esta persona, una vez terminada la cata
nos muestra la numeración y los resultados.
The samples are given to a person who is not a taster, and is taken to
a contiguous room where the tasting will take place, and the samples
are numbered according to her criteria. Then they are served in each
glass from left to right. At this time, the tasters are in another room, and
when the serving is finished, they are invited to pass to the room. The
only person who knows the numbering of the samples is the first person
mentioned, and once the testing has finished, will demonstrate the
numbers and the results.
