3. Bran Flake Pancakes

4. Serves 4
(2 pancakes each)
This delicious Bran Flake
pancake recipe, gives you a
great start to your day.
It's low in fat, quick and super
tasty.

5. Ingredients
* 50g bran flake cereal * 1 medium-sized egg
* 150g self-raising flour * 2 tbs clear honey
* 150ml semi-skimmed milk * 25g chopped dried apricots

6. Place the self-raising flour in a large bowl and
whisk in the egg.
Gradually add the honey and milk and then whisk
to form a batter. Stir in the sultanas and bran
flakes.

7. Heat a little sunflower oil in a frying pan
and add 4 tablespoons of the mixture into
the pan.
Cook gently for 1-2 minutes, turn over and
cook for a further minute until golden.

8. Repeat to make four more pancakes.
Serve drizzled with honey and freshly chopped
fruit. Enjoy!
