Group Observation
I saw the following process in English Biscuits Manufacturers (Private)
Limited company.
Mixing
Mixing is an initial process for the
making of Biscuits. I saw that all
the ingredients are put in a big
mixer. Then the rotating square
and rectangular rod mix the
ingredients. Then mixed
material(dough) passing it from a
metal detector. Detector check
the metal’s particles or impurities
in the mixed material(dough).
Cutting:
We saw the mixed material
(dough) are entered in the
cutting machine. Different
cutting machine cuts the
different sizes and shapes
biscuits. Round shaped
biscuits are for Marie, Butter
puff, peanut pick etc., and the square/rectangular shaped biscuits is for
Rio, Gluco, Sooper etc.

Baking:
the baking process divided into 5 zones.
In zone 1 and 2, biscuits are backed on direct fire, these zones are
called direct Gas Zone. After passing through direct
gas zone, these biscuits are moved towards zone 3
and 4 which are called thermo cyclic zone. In this zone
biscuits are backed through hot air. After passing through
zone 4 a final spray of hot air is given to the biscuits in zone 5 which
change their color into brown. The temperature of the oven is about
250-300 C and the temperature varies from different zone.
Chillers:
In this step backed biscuits are passed from the chillers. The main
function of chillers’ is to cool the biscuits. Once cooling process is
complete, the biscuits are forwarded into packaging department.

Packaging:
This is the final step in
the production
process, the workers
packed and wrapped
the products into ticky
pack, half role and
boxes for supplying to
the costumer.
Conclusion:
Supply chain management is the oversight of materials,
information’s and the finance as they move in the process from
supplier to manufacturer to wholesaler to retailer to consumer. It is
said that the ultimate goal of any effective supply chain management
system is to reduce inventory (with the assumption that products are
available when needed).
