Avid golfers waiting to hit the links at the Biltmore
can start polishing their clubs, as the Biltmore
Golf Course, originally designed by Donald Ross
in 1925, reopened in November 2007 following a
$5 million restoration. “We wanted the golf course
enhancement to be treated with the same integrity
as the hotel restoration efforts,” says Biltmore Hotel
Manager Dennis Doucette. “In order to do so, we
secured golf architect Brian Silva, who specializes
in Donald Ross design.”
Working from original routing plans, vintage
aerial photographs and Ross’s handwritten notes,
Silva set about the task of revamping the course.
“Biltmore’s Golf Course was a great story before
I ever stepped foot on the property,” says Brian
Silva. “As far as I’m concerned, the Biltmore is at
the dawn of a second Golden Era.”
Biltmore’s clubhouse is also undergoing a complete
refurbishment, with updated locker rooms, golf
shop, bar and restaurant. The 19th Hole Bar & Grill
will feature an array of microbrew beers, a stellar
wine selection from wineries owned by celebrity
sports figures, and an expanded menu of classic
pub favorites.
In February 2008, gastronomy makes a landing on
the green, when Biltmore hosts the Food Network
South Beach Food & Wine Festival Golf Invitational
(see calendar for details). Guests will sip, savor
and swing as celebrity Chef Ming Tsai oversees the
appetizers and refreshments served throughout the round. Afterwards,
Chef Tsai and Cigar Aficionado Executive Editor Gordon Mott will host a

Salmone All’ Olio D’oliva Nuovo
2.5 lbs. Salmon Fillet, cubed
1.5 qt. Extra Virgin Olive Oil
.5 qt. Canola Oil
1 lb. Roma Tomatoes
2 oz. Garlic, sliced
3 oz. Basil, chopped
2 oz. Italian Parsley,
chopped
Juice from 2 Lemons
1 lb. Butter
1 cup White Wine
1 cup White Wine Vinegar
2 oz. Shallots
1 oz. Black Peppercorns
1 oz. Chives, chopped
In a pot, combine lemon juice, peppercorns,
shallots, wine and vinegar and bring to a boil, reducing
the liquid to 1/3. Strain and set in a mixing bowl; add
softened butter and whisk until the butter is
completely absorbed and the mixture is cream-like.
Set butter mix aside.
Dice the Roma tomatoes and discard all seeds. Mix
garlic, parsely and basil with tomatoes and add extra
virgin olive oil (to taste). Season with salt and pepper
and set aside.
Bring .5 quart of extra virgin olive oil and .5 quart of
canola oil to low heat (122°F). Infuse cubed salmon for
5 minutes, then remove, strain and dry.
Arrange salmon on middle of plate. Pour the butter
mix around salmon and garnish with tomato salsa and
chopped chives.

The Biltmore is now integrated with the 2008 Food
Network South Beach Wine & Food Festival. What do you
believe will be its greatest contribution to the Festival?
I believe that the Biltmore is one of the finest resorts in South
Florida. The reputation of the Biltmore is incomparable to any
other hotel in the area. It really does add a sense of prestige
to the event.
You played a key role in the rebirth of South Beach in the
1980s. Almost two decades later, you are at the helm of
South Beach’s most notable event. What differences — or
similarities — do you notice in the evolution of South
Beach between those early days and today?
The South Beach of the 1980’s and the South Beach of today
are completely different. Different consumer, different product,
and different level of excitement. The only consistent element
is that it is still one of the most beautiful beaches in the world.
What is the most rewarding aspect of your work with the Festival?
The most rewarding aspect is that the Festival benefits
the students at Florida International University’s School of
Hospitality and Tourism Management.
What are some of your favorite travel destination when
you want to “get away?”
Being a foodie, I love to visit New York, San Francisco,
Chicago and Los Angeles domestically. I also love Barcelona.
Spain is the new France in the culinary world!
Do you have an affinity towards any particular type of
cuisine?
I am a meat and potatoes guy. I enjoy basic foods. I am a mall
food court junkie.
Do you enjoy cooking? What are some of the specialty
dishes you prepare at home?
Many people have forgotten that I am a chef by trade. I
graduated from the Culinary Institute of America in 1979.
People have forgotten that I cook because I rarely ever get
to do it anymore! I like to cook when I rent a home every
summer. Bar-B-Q is my favorite.
Do you enjoy wine? Do you have a preference for a
particular region or grape varietal?
I appreciate wine — but I love Champagne. I am a closet rosé
Champagne lover.

the world of food & beverage.
My greatest passion is my family. I enjoy spending time with
them: my nieces, nephews, my dog, Spencer, and my partner,
Ricardo.
What has been the most memorable experience (so far!)
you have had at the Biltmore?
I celebrated my 30th birthday in the Biltmore ballroom. A
cocktail party in the Capone Suite, followed by dinner in one
long table for 100 people in the main ballroom. This was right
around the time that Phantom of the Opera came out, so I hired
an opera singer to perform songs from the musical.
When I am motivated, I love to exercise in the Biltmore gym
— but I prefer to spend time in the Biltmore spa. The hot rock
massage is the best you can find!
7. CHEF’S COOKBOOK
Coffee & Chocolate Mousse Cake
Serves 8
Hazelnut Sponge
Ingredients
5 oz Egg Whites
2.5 oz Sugar
1/2 cup Hazelnut Flour
2.5 oz Powdered Sugar
Procedure
Whip egg whites with sugar until stiff, then add hazelnut flour and powdered sugar;
whip together. Pre-heat the oven to 360F. Coat bottom of a sheet pan with cooking
spray and spread mixture on top. Bake for 14 minutes.
In a pot, boil coffee and sugar, turn off the heat, mix in egg yolks and stir at 180F. Add
gelatin and chocolate and cool to room temperature. Fold in whipped cream.
In a bowl, whip heavy cream, sugar and vanilla bean seeds, until stiff.
Cut out a ring into hazelnut sponge and pour in mousse. Freeze until ready to thaw
and serve. Remove the ring and decorate with whipped cream.

Biltmore’s legendary Donald Ross golf
course is reopened after a $5 million
renovation.

& Wine Weekend event is now integrated
with the Food Network South Beach
Wine & Food Festival. South Florida’s
two largest, celebrity-laden food & wine
festivals have joined forces to deliver a
spectacular epicurean extravaganza in
February 2008, with proceeds benefiting
the FIU School of Hospitality & Tourism
Management.
