2. Broccoli Fried Rice
Ingredients
Serves: 8
275g uncooked long-grain rice
1 tablespoon vegetable oil
500g broccoli florets
3 spring onions, diced
2 eggs, beaten
2 tablespoons soy sauce
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Preparation method
Prep: 5 mins | Cook: 25 mins
1.Cook rice according to package
instructions. Set aside.
2.Heat oil in a large frying pan or wok
over medium heat. Sauté broccoli until
tender but still crisp, and add spring
onions. Remove from frying pan.
Scramble eggs; return broccoli mixture
to pan. Stir in cooked rice, soy sauce,
salt and pepper.
This is a simple recipe from allrecipes.co.uk. I have
chosen this recipe because, the method is really
straight forward and the ingredients are fairly cheap,
appealing to my target audience (mid-teens and
students). As I am create recipe cards that will serve
one or two people, I will change the amount of
ingredients needed. I will also simplify the method,
as step two in the method seems quite rushed and
quite hard to understand, I will change this by
putting in more smaller steps and making the
instructions clearer. I think I would offer alternatives
of the recipe too, by stating that they could use other
vegetables or incorporate a meat substitute into the
recipe, such as, Tofu.

This is a variation on the recipe just shown. As
you can see I have altered the amount of
ingredients so that there is only enough to
serve two people, and I have narrowed down
the method to make it easier to understand
with more steps, but shorter. I also said in the
last slide that I would offer alternatives on the
recipe, unfortunately I could not fit it under the
ingredients, but on the actual recipe cards I will
offer the alternatives within the ingredients list.
