Evangelos Chatzivaritis of AOA CHATZIVARITIS SA presented on their organic wine production best practices. They have been operating an organic vineyard and winery since the early 1980s. Their production process is primarily manual with a focus on ensuring high quality grapes. Their facility has winemaking, bottling, and aging areas. They have won several national and international awards for their wines. The winery promotes sustainability and social responsibility through organic practices, renewable energy use, and cultural/accessibility events.

2. Brief history
The idea of creating the Chatzivaritis estate
emerged in the early of 1980s
In 1994 a 5 hectares vineyard was planted
In 2001 another five-hectare plot was planted
and a year later an experimental vineyard started
for the purpose of trying out new varieties
