1.1 INDDUSTRY PROFILE
Introduction
Though India has a low per capita ice cream consumption of 300 ml
per annum, the trend is slowly changing due to a number of reasons.
DARE explores the dynamics of the business.
Indian summers are synonymous with ice creams. Come summers,
and you will see a number of colourful.
Pushcarts selling the choicest of ice creams in numerous flavours
from the traditional vanilla and chocolate to unusual varieties like
Mother Diary’s Shahi Nazrana. If that doesn’t baffle you then the ice
cream range definitely would, for example the ice cream range for the
children would be entirely different from that for the teenagers or for
that matter adults. Or, for those who like to have ice cream in peace,
there are a number of ice cream parlours that are opening shop.
But did you know that a 100 ml scoop of your favourite ice cream
that you ordered may contain up to 50% air! This makes the business
a highly profitable venture to get into – sometimes, the profits can go
upto 100%! However, there are several challenges to this business as
well. In this story, DARE attempts to find out the dynamics of the
business.

1.21.2 Company ProfileCompany Profile
In 1944, a young professional, Satish Chona, started an ice cream
shop, by the name of Havmor, in Karachi in 1944. Initially it began as
a part time venture to supplement the family income.
The subsequent three years saw it becoming a popular local brand.
But in 1947, in the wake of the India-Pakistan partition, he was
forced to leave everything behind and migrate to India. He tried
setting up a new venture in couple of Indian cities- Dehradun and
Indore butthen ultimately settled in Ahmedabad. Starting from
scratch, Satish Chona began operations from a handcart at the
Ahmedabad railwaystation, churning out ice-cream manually. He
called this fledgling brand HAVMOR- a short form of Have More-
promising the customers more value for money and more taste to
relish. Achhai, Sachhai and Safai (Goodness, Purity/honesty and
hygiene) were the guiding values that endure to date.

From the Present to the Future
The West was won by taste, innovation and quality. In the last
six decades, from a handcart, Havmor has grown into a delicious
facet of daily life of a large part of Western India. It is available
through 20,000 + outlets across Gujarat, Maharashtra, Rajasthan
and Madhya Pradesh.
Havmor has more than 160 products, possibly the most
extensive range in India. The Company has 200,000 liters per
day, ISO 22000:2005 and HACCP certified state-of-the-art
manufacturing facilities. In the next two years the capacity is
planned to double. The existing Group turnover is Rs. 2.3 billion
which is expected to cross Rs. 3 billion by 2012-13.
The third generation- Ankit Chona- is contributing to the
business, building on the core values. He is the driving force in
expanding the Restaurant Division as well as popularizing the
Company owned Ice cream and Fast Food Parlors- Hav Fun. He
is leading the modernization and standardization process of the
Company.

cream. The company has its own working capital
generation system which has so far generation around Rs.1
crores as deposit from societies for which interest is
paying regularly.
Today HAVMOR has earned a good name. It is the largest
food chain in whole state. Today it’s uses 2000 liters milk

2.1 What is production?
“Production is a process of conversion of raw material
into finished goods with the use of different
resources.”
And the production process is the combination of
certain steps to obtain the final product. These steps
collectively are said as process.
Many processes are undertaken in creaming before the
milk & milk products reach the hands of the final
consumer.
Because of the processing the life expectancy of these
perishable items increases and they may be preserved
and retained for a conger period without any
deterioration in the quality.

The various process under gone by the dairies are as
follows: -
Pasteurization:
The word “Pasteurization” has been named of the name
of the eminent French Scientist, Louis Parture, who
studied that heating of liquid, to a high temperature
considerably improves their keeping qualities. This
process is widely employed in almost all the dairy
operations, in general the word “pasteurization” can
not the heating of milk & milk products to a
temperature which destroys almost all the micro
organization present and that too without significantly
affection the properties of these products.
The milk is warmed nicely and from it milk cream is
produced. Because milk is refined and tested nicely
from the dairy only no need to be tested it. Making
cream add needed dry fruits and sugar, Stabilizers and
chemicals in it. Sugar is mixed in milk while
warming. Cleaning of dry fruits and cutting is done by
over machine very nicely.
They make different varieties by ice cream by different
process.
They pack than nicely and store in cold storage at –
25% Celsius to –30% Celsius.

there are 600 workers are employed divided in three
shifts: -

They work in two shifts day and night; manufacturing
work goes on only in day and in night preservation.
• Wages & Salaries
HAVMOR Ltd. Provide monthly expenditure on
salaries is approximately 6 lacks, out of which 4 lacks
are paid to the regular employment & 2 lacks to
contractual workers.
• Provident Fund: -
Contribution of provident fund is made on a monthly
basis predetermined rate to appropriate authority on
accrual basic and charged to them.
• As per the accounting standard issued by the
institute of chartered accountants of India, the
company is required to make provision for leave
encasement on accrual basis also.

gratuity in respect of eligible employees is covered by
a group gratuity scheme with life insurance

mechanism whereby a business monitors and ensures its

8.1 Future plans
“HAMORE “is wanted to reach turnover 70 crores to 150
Crores till 2015.
“HAVMORE” is a meaning for spreading its products
through out the country and make branches in every state
at the country is that production and distribution is done
nicely.
In the dialing segment “HAVMORE” is focusing on new
added value products, like burger. A new version of milk
powders or that is instantly shall in cold water. Two new
basundi and kulfi will soon be launched.
Expansion in the percentage of shares in market up to
40%.

The survey resulted into following conclusions:
 HAVMOR must come up with new promotional activities
such that people become more aware about Ice-cream,
 Quality is the dominating aspect which influences consumer
to purchase HAVMOR product, but prompt availability of
other brands and aggressive promotional activities by others
influences the consumer towards them and also leads to
increase the popularity of brand.
 People are mostly satisfied with the overall quality of
HAVMOR Products, but for the existence in the local market
HAVMOR must use aggressive selling techniques.
 Consumers purchase Ice-cream from Restaurant more than the
Havmor parlours so company should have to increase
awareness level of consumers towards Havmor ice-cream
parlours and promote schemes at Havmor outlets.

10.1 RECOMMENDATIONS
On careful observation of Havmor Ice-cream, we have the following
suggestion for Havmor Ice-cream, Ahmedabad which on proper
implementation may provide a big boost to it.
• We have observed that people of age group 20 to 30 are
maximum consumer of Havmor Ice-cream. So the target market
for Havmor Ice-cream is people of age group 20-30 years & also
kids of age group 10-20 because kids are always easy targets.
• All information regarding Havmor and its products should be
available on internet.
• Increase in advertisement and publicity.
• Motivation program for booth and parlor owners.
• Glow sign boards should be provided to booth and parlor
owners.
• New flavours of Havmor Ice-cream should be launched like ice-
cream.
• Inspection and frequent check of booth and parlors.

Initially it began as a part time venture to supplement the family income. The subsequent three years saw it becoming a popular local brand. But in 1947, in the wake of the India-Pakistan partition, he was forced to leave everything behind and migrate to India. He tried setting up a new venture in couple of Indian cities- Dehradun and Indore butthen ultimately settled in Ahmedabad. Starting from scratch, Satish Chona began operations from a handcart at the Ahmedabad railwaystation, churning out ice-cream manually. He called this fledgling brand HAVMOR- a short form of Have More- promising the customers more value for money and more taste to relish. Achhai, Sachhai and Safai (Goodness, Purity/honesty and hygiene) were the guiding values that endure to date. 2

These steps collectively are said as process. Many processes are undertaken in creaming before the milk & milk products reach the hands of the final consumer. Because of the processing the life expectancy of these perishable items increases and they may be preserved and retained for a conger period without any deterioration in the quality. 15

The various process under gone by the dairies are as follows: - Pasteurization: The word “Pasteurization” has been named of the name of the eminent French Scientist, Louis Parture, who studied that heating of liquid, to a high temperature considerably improves their keeping qualities. This process is widely employed in almost all the dairy operations, in general the word “pasteurization” can not the heating of milk & milk products to a temperature which destroys almost all the micro organization present and that too without significantly affection the properties of these products. The milk is warmed nicely and from it milk cream is produced. Because milk is refined and tested nicely from the dairy only no need to be tested it.
