Origin:
Produced in the verdant land of Guatemala, Zacapa 23 and Zacapa XO are crafted
ultra-premium rums.
Process:
The country’s fertile volcanic soil and tropical climate combine to make Guatemala
one of the best places in the world to grow the raw ingredient for rum-sugar cane.
First pressed “virgin sugar cane honey” or sugar cane juice is extracted and is the base
ingredient for both Ron Zacapa Centenario variations. Following fermentation and
distillation, master blender MS. Lorena Vasquez ages the rum 2300 m above the sea
level in an ageing facility, fondly known as the ‘House above the Clouds.’ Aged using
and adapted Spanish sherry maturing process, the ‘Sistema Solera’ enables rums of
varying ages and personalities to be carefully blended by the Master Blender Lorena.
Old and new rums are carefully combined and matured in a series of casks previously
used to store American Whiskeys, delicate Sherries and Pedro Ximenez wines, which
give extraordinary depth of flavor. The high altitude constant average temperature of 14 degree (58F)
allows the liquids to retain distinctive deep, rich flavors and qualities.
Description: Zacapa 23 is an ultra-premium blend of rums aged between 6 and 23 years old.
Serve: A deep, rich sipping rum, it is best experienced neat or on the rocks: pour slowly into fine crystal
tumbler and chill over a large ice cube.
Process: after ageing in different casks, including robust bourbon, delicate sherry and Pedro Ximenez wine
casks, prior to bottling, Zacapa 23 is rested in re-charred white oak barrels to impart additional flavor from
the wood.
Testing Notes:
Colour: Dark mahogany
Nose: Great intensity. Sweet and delicate with notes of wood, fruitiness, vanilla, almond, caramel, and
fudge and chocolate accentuated with hints of spice.
Taste: the complex sistema Solera aging process creates exciting intricacies in Zacapa 23 with its honey,
butterscotch, spiced oak and dried fruit flavors. It is dense and exceptionally balanced with a long deep
aftertaste.
Finish: evocative, elegant and noble.
Verdict: it received 97 points from the Beverage Tasting Institute and a Gold Medal at the International
Cane Spirits Festival.
