Mental health has been in the news quite a bit lately. Dozens of U.S. states are currently suing Meta for contributing to the youth mental health crisis by inserting addictive features into their products, while the U.S. Surgeon General is touring the nation to bring awareness to the growing epidemic of loneliness and isolation. The country has endured periods of low national morale, such as in the 1970s when high inflation and the energy crisis worsened public sentiment following the Vietnam War. The current mood, however, feels different. Gallup recently reported that national mental health is at an all-time low, with few bright spots to lift spirits.
To better understand how Americans are feeling and their attitudes towards mental health in general, ThinkNow conducted a nationally representative quantitative survey of 1,500 respondents and found some interesting differences among ethnic, age and gender groups.
Technology
For example, 52% agree that technology and social media have a negative impact on mental health, but when broken out by race, 61% of Whites felt technology had a negative effect, and only 48% of Hispanics thought it did.
While technology has helped us keep in touch with friends and family in faraway places, it appears to have degraded our ability to connect in person. Staying connected online is a double-edged sword since the same news feed that brings us pictures of the grandkids and fluffy kittens also feeds us news about the wars in Israel and Ukraine, the dysfunction in Washington, the latest mass shooting and the climate crisis.
Hispanics may have a built-in defense against the isolation technology breeds, owing to their large, multigenerational households, strong social support systems, and tendency to use social media to stay connected with relatives abroad.
Age and Gender
When asked how individuals rate their mental health, men rate it higher than women by 11 percentage points, and Baby Boomers rank it highest at 83%, saying it’s good or excellent vs. 57% of Gen Z saying the same.
Gen Z spends the most amount of time on social media, so the notion that social media negatively affects mental health appears to be correlated. Unfortunately, Gen Z is also the generation that’s least comfortable discussing mental health concerns with healthcare professionals. Only 40% of them state they’re comfortable discussing their issues with a professional compared to 60% of Millennials and 65% of Boomers.
Race Affects Attitudes
As seen in previous research conducted by ThinkNow, Asian Americans lag other groups when it comes to awareness of mental health issues. Twenty-four percent of Asian Americans believe that having a mental health issue is a sign of weakness compared to the 16% average for all groups. Asians are also considerably less likely to be aware of mental health services in their communities (42% vs. 55%) and most likely to seek out information on social media (51% vs. 35%).

a- Objectif du raffinage
Les huiles brutes renferment un certain nombre d’impureté indésirable, responsable du
goût et des odeurs désagréables. Le but du raffinage est de purifier ces huiles brutes végétales.
En effet, il consiste à éliminer au mieux ces composés nocifs afin d’obtenir la qualité
correspondante aux normes en vigueur et de faciliter sa conservation.
Le raffinage chimique comprend une série de traitement ayant pour objectif de purifier
l’huile des matières indésirables et d’aboutir à un produit neutre de goût, résistant à
l’oxydation, adapté à l’emploi désiré et débarrassé de ces substances nocives. L’opération de
raffinage passe par plusieurs étapes :
• Démucilagination
• Neutralisation
• Lavage et séchage
• Décoloration
• Filtration
• Désodorisation
• Refroidissement
b- Description du processus de raffinage
- Démucilagination
Parmi les impuretés des huiles brutes citant les mucilages qui sont des phospholipides
(glycérides liés à l’acide phosphorique et à une base azotée) ainsi, cette huile brute contient en
moyenne des teneurs en phosphore de l’ordre de 200ppm par conséquent cette étape est
primordiale afin d’éviter tout problème lors du raffinage à savoir :
L’oxydation de l’huile (les phospholipides sont souvent liés à des métaux lourds
catalyseurs d’oxydation) et dégagement d’une odeur indésirable.
Les pertes d’huiles au stade du lavage,
La formation de la mousse au niveau du séchage,
Le colmatage du filtre.
Le dégommage consiste à disperser dans l’huile brute, chauffée environ 90°C de 0.1 à
0.3% d’acide phosphorique commercial à 85%, le mélange est ensuite acheminé vers un bac
de contact ou le mélange reste en contact de 20 à 30 minutes.
- Neutralisation
L’huile brute contient toujours des acides gras libres à éliminer, ces derniers sont
indésirables dans l’huile car ils sont des catalyseurs d’oxydation. Donc la neutralisation par la
soude caustique élimine les acides gras sous forme de savons appelés « pâtes de
neutralisation », qui comprennent outre les savons de mucilage, des colorants et des produits
d’oxydation (difficile de s’en débarrasser par décoloration).
Durant ce traitement on prévoit deux types de réactions :

La neutralisation de l’excès d’acide phosphorique ajouté pour dégommer les
huiles.
La neutralisation des acides gras libres en formant les savons sodiques :
R-COOH + NaOH R-COONa + H2O
Acide gras + Base Savon + eau
Pour déplacer l’équilibre dans le sens d’une neutralisation complète, il est nécessaire
d’employer un léger excès de soude. Et par la suite, cet excès peut produire une réaction
nuisible, appelée « saponification parasite » durant laquelle les triglycérides se dégradent en
glycérol et des savons sodiques :
Triglycérides + Soude Glycérol + Savon
Les principales phases de la neutralisation sont les suivantes : à la sortie du bac de
contact, l’huile démucilaginée est mélangée dans un malaxeur avec de la soude caustique de
concentration varie entre 16 à 20°Bé, et injectée par une pompe doseuse. Ensuite le mélange
est passé dans un séparateur centrifuge qui permet de séparer l’huile neutre de la pâte à savon.

- Lavage et séchage
Lavage :
C’est l’opération qui permet d’éliminer les substances alcalines(savon et soude en
excès) présentes dans l’huile après la neutralisation, ainsi que des traces de métaux, de
phospholipides et autresimpuretés.
Le lavage s’effectue en deux stades avec de l’eau adoucie.
1er
lavage :
L’huile neutralisée est chauffé à une température de 90°C, ensuite on y ajoute de l’eau
chaude adoucie, à la même température que l’huile(90°C) pour solubiliser les teneurs en
savon résiduelles. Cette huile subi un mélange rapide puis une centrifugation à travers un
séparateur pour séparer l’huile lavée de l’eau du premier lavage, ainsi que les impuretés
entrainées avec elle.
2ème
lavage :
On procède de la même façon, le deuxième lavage qui permet d’éliminer les dernières
traces du savon ainsi on obtient une huile presque débarrassée du savon et l’eau du deuxième
lavage.

Séchage
Après le deuxième lavage l’huile contient un taux d’humidité qui n’est pas
négligeable, qui doit être réduit pour ne pas gêner les opérations qui suivent, surtout la
filtration, durant laquelle un taux d’humidité élevé provoque un colmatage des filtres.
Cette opération est réalisée par un pulvérisateur qui envoie l’huile lavée d’une
température de 90°C à grande vitesse dans une cuve de séchage sous vide ce qui provoque
l’évaporation de l’eau à des températures n’atteignons pas les 100°C.
La présence de l’humidité dans l’huile augmente son acidité qui se traduit parla
dégradation de l’huile.

- Décoloration
C’est une phase qui consiste à éliminer les pigments colorés (chlorophylles et
carotènes), responsable de la couleur foncée de l’huile brute et que la neutralisation ne les a
que partiellement détruits. Cette décoloration est dite aussi blanchiment qui fait appel à des
agents adsorbants : terres activées et charbon actif.
L’huile et la terre sont mélangées dans une cuve munie d’un agitateur.
La quantité de la terre activée dépend de la qualité d’huile, elle varie de 0.2 à 1% pour l’huile
de tournesol, ensuite le mélange est injecté dans une cuve, appelé décolorateur, ce dernier est
constitué de deux compartiments :
• Le compartiment supérieur : est un réchauffeur qui permet d’amener la température du
mélange huile-terre à une valeur d’environ 110°C, par la circulation de la vapeur dans
un serpentin entourant ce compartiment.
• Le compartiment inférieur : est l’élément responsable de la décoloration proprement
dite avec un système de barbotage de la vapeur qui assure un contact parfait entre la
terre et l’huile, ce mélange est maintenu à un temps de contact moyen d’environ 20 à
30 min.
L’opération se déroule sous vide afin d’aspirer le reste d’eau, et éviter l’oxydation.

L’huile décolorée obtenue va être directement acheminée vers les filtres à
plaques puis les filtres à poches pour débarrasser l’huile des particules fines et des
terres de décoloration.
- Désodorisation
C’est une opération très importante qui a pour but principal l’élimination des
substances volatiles et odorantes.
Cette opération consiste à faire passer l’huile filtrée dans un échangeur à plaques, afin
d’augmenter sa température à 130°C, ensuite l’huile chauffée est acheminée vers le
déshydrater sous vide, cette huile séchée passe dans un deuxième échangeur de chaleur,
duquel elle sort à une température de 210°C. la dernière étape permet d’élever la température
d’huile à 225°C, puis sa pénétration dans le bac de désodorisation qui est constitué de 5
étages, chacun d’eux a sa propre injection de vapeur sèche qui engendre le barbotage de
l’huile et facilite l’entrainement des composés volatils vers la phase vapeur sous l’effet du
vide. L’huile préchauffée entre par la partie supérieure du désodoriseur, ensuite l’huile
s’écoule par débordement du premier bassin au deuxième bassin et de la même manière
jusqu’au 5ème
bassin ou l’huile va être récupérer.
La désodorisation permet donc d’éliminer les traces de produits volatils qui
donneraient à l’huile un fruité désagréable ou un goût de rance.

- Fortification
La fortification des aliments est définie comme tout traitement ayant pour but essentiel
d’élever la teneur en principe nutritive de ces aliments au-dessus de la valeur considérée .la
fortification des aliments avec des vitamines A et D3, estune stratégie très efficace pour lutter
contre les troubles dus aux carences en ces deux vitamines.
Après la désodorisation, et à l’aide d’une pompe doseuse on injecte à l’huile de la vitamine
A et D3. Ces vitamines ajoutées d’une quantité bien définie par la réglementation, sont
d’abord mélangées dans des petits bacs avec de l’huile désodorisée avant d’être injectées.
Après l’huile raffinée est pesé puis stockée dans des citernes sous une atmosphère azotée
pour éviter l’oxydation.

Remarque:
Le raffinage de l’huile de tournesol et l’huile de grignon d’olive diffère du raffinage de
l’huile de soja par une seule opération de purification qui est le Prédécirage-Décirage qui se
déroule après la neutralisation. Les autres opérations restant sont les mêmes.
But Prédécirage-Décirage :
Les huiles de tournesol ou de grignon d’olive contiennent des cires qui sont des esters
d’acides gras. A basse température, ces cires confèrent un aspect trouble à l’huile. Il est donc
essentiel d’éliminer ces éléments avant l’embouteillage et la commercialisation de l’huile.
Procédé :
L’huile de grignon ou de tournesol après neutralisation passe par :
Un 1er
refroidissement dans un échangeur à plaque huile-huile (l’huile froide
sortant du décirage va refroidir l’huile chaude qui vient de neutralisation).
Un 2ème refroidissement dans un échangeur à plaque huile-eau gelé puis dans un
échangeur tubulairehuile-eau gelé jusqu’à 11°C.
Ensuite, l’huile froide est injectée par une 2ème
soude afin de créer plus de savons
qui vont jouer le rôle de combinaison des cires.
Un 3ème
refroidissement dans deux maturateurs avec l’ajout de l’eau pour bien
cristalliser les cires sous forme de cristaux pour faciliter la séparation, sachant que
l’huile passe d’un maturateur à l’autre dans un circuit plus long pour avoir un
temps de séjour.
L’huile sort à une température de 8°C du deuxième maturateur vers le troisième
maturateur (rôle de réservoir) et reste dans ce dernier une durée assurant
l’élévation de température de 8 °C jusqu’à 15°C pour passer à La séparation des
cires (partie lourde) de l’huile (partie légère) à l’aide de la force centrifugeuse du
séparateur auto-débourbeur.

4. Conditionnement des huiles
• Emballage
C’est la dernière étape de processus de production. Elleconsiste à la fabrication de
l’emballage plastique et la mise en bouteille de l’huile raffinée. Il est équipé de différentes
machines conçues en France en Allemagne et en Italie.
Extrusion et soufflage des bidons
Les bidons en PEHD fabriqué à partir de plastique en granulés passent par les étapes
suivantes :
Les préformes subissent un chauffage dans un four qui contient des lampes pour que
la matière devienne molle.
Un étirage par une tige d’élongation donne à la bouteille la hauteur prévue.
Le pré soufflage avec une pression de 7bars, s’effectue pour préparer la matière à subir
une haute pression lors du soufflage.
Le soufflage est réalisé à une pression de 40 bars.
A l’aide du dégazage, la bouteille sort du moule avec le dégagement de l’air qui donne
la forme finale à la bouteille.
Une fois les bouteilles soufflées sont obtenues, elles sont acheminées par le convoyeur
à air comprimé vers la remplisseuse.

• Conditionnement
Le magasin de conditionnement est un magasin où l’huile raffiné
bouteilles ou bidons qui s’emballent dans des cartons ensuite dans des palettes et se déposent
dans le stock des produits finis. Le magasin est constitué de deux lignes de production

5. Contrôle de qualité des huiles
Pour garantir la qualité des huiles produites, il faut veiller à la qualité des produits via
plusieurs contrôles faisant intervenir les techniques de la chimie analytique et non
instrumentale.
Lors de détection d’une non-conformité en réalisant des analyses adéquates au cours du
processus, le responsable laboratoire renseigne le responsable production; ce qui fera l’objet
d’une intervention corrective.Dont les analyses effectuées au niveau du laboratoire de la SIOF
sont les suivantes:
• Analyses physico-chimiques :
Acidité libre (en acide oléique).
Alcalinité ou le taux de savon.
Analyses de la pâte de neutralisation.
Teneur en eau et matières volatiles.
Teneur en impuretés insolubles.
Indice de peroxyde.
Transmission.
Dosage du phosphore.
Excès de soude à la neutralisation.
• Analyses chromatographiques :
Teneur en cires par CPG.
Teneur en composition des acides gras par CPG.
Teneur en stérols par CPG.
Teneur de la différence entre la composition réelle et théorique des triglycérides à
ECN 42 par HPLC.
