4. LAGER VS ALE
LAGER ALE
Relatively new type of beer
Produced by bottom fermenting yeasts
such as Saccharomyces uvarum.
Need cooler fermentation temperature.
Longer brew cycle- up to several months.
Lagers are characteristically "smooth,
elegant, crisp, and clean.
Thousands of years old
Produced by top fermenting yeasts such
as Saccharomyces cervesiae.
Need warmer fermentation temperature.
Quick brew cycle: as little as 7 days.
Ales are usually described as “strong,
robusty, hearty ".
6. DARK LAGER
• Generally darker in colour.
• The darkness of the beer is due to the presence of roasted malts.
• Lightly hopped despite the colour, not very heavy.

8. PALE LAGER
• Light in both colour and body.
• Very pale to golden coloured body with well attenuated body.
• Generally drier and more alcoholic.

Lagers were mainly dark until 1840s. Pale lagers
were not common until the later part of 19th century
when technological advancements made them
easier to produce.
