4. LYOPHILIZATION
Lyophilisation is also known as
freeze drying or cryodesiccation.
It is a low temperature
dehydration process.
It result in a high quality product
because of low temperature used
in processing.
This is in contrast to dehydration
by most conventional method that
evaporate water using heat.

There are 4 stages in lyophilization :
Pre-treatment
Freezing
Primary drying
Secondary drying

Primary applications of freeze drying include-
Biological (example: bacteria and yeast).
Biomedical (example: surgical transplant).
Food processing (example: coffee).
Preservation.
In pharmaceuticals and biotechnology
Freeze drying of food :

fruits and other edible items.
Technological industry.
7. ADVANTAGES
Freeze drying is viewed as the optimal method of
choice for dehydration because of the preservation of
quality characteristics of food product such as aroma,
rehydration and bioactivity are noticeable higher
compared to food drying using other techniques.

Effects on nutrients and sensory quality.
8. DISADVANTAGES
Microbial Growth: Although microbial growth is inhibited by
the low moisture conditions, it can still survive in the food products.
Expenses: Cost for freeze drying is about 5 times more than
conventional drying methods making it not an ideal choice if the value
of the product is not increased after processing.
Silicone Oil Packaging: Silicone oil is the common fluid that is
used to heat or cool shelves in the freeze dryer. The continuous heat
or cool cycle can lead to a leakage of silicone oil at weak areas that
connect the shelf and hose.
