WHAT IS HOSPITALITY
• A Friendly and generous behavior towards visitors and guest, intend to make them feel
welcome.
• Hospitality is taking care of guest and anticipating there needs.
• Hospitality is related with the business of entertaining clients, conference, delegates and
other official visitors.
• Service of Food and Beverage is integrated part of Hospitality.
ETYMOLOGY
Hospitality word is derived from Latin word “HOSPES” which means Strangers.

(Stranger or Guest) (Guest / Strangers Chamber for Lodging) (Welcoming and Offering
Services)
(Shelters for Strangers) (like-lodging, Food, Transport
etc.)
SERVICE INDUSTRY AND HOSPITALITY
• Every industry today is known either for there Products or Services.
• Products are something that is produced in a large quantity so that it can be sold.
• Services involved offering Information, help, assistance, advice, consultancy etc. in
exchange of Payment.
• Today industries that are into Production of tangible goods, are also engaged in
providing services for there Customers or Client after selling of there Products.
• There are many such industries which produce intangible products such as Services - in
Hotels, Tourism, Railways, Car Rental, Airlines, Cruise Liner, Telecommunication,
Banking, Postal Services etc. which comprises Service Industry.
• Of these, Hotels, Tourism, Railway, Airlines, Cruise Liners, QSR (Quick Service
Restaurants) etc. offering Services with Hospitality.
HOTELS COMMONLY REFERS TO
HOSPITALITY INDUSTRY
• Hotel Industry is the largest sector of Service Industry offering the true essence or
concept of Hospitality, thus Hotel Industry is commonly refers to Hospitality Industry.
• Most of the concepts of services in Hotels are directed by the ethics of Hospitality and
the guest are handled with extreme care.
HISTORY OF HOTEL INDUSTRY (WORLDWIDE)
• One of the oldest Commercial Industry in the world.
• In early days, traders, explorers, pilgrims etc. travel for sake of Food, Business, Peace,
God… they needed a break in there journey and also requires food and a shelter to rest.
These Travellers were initially considered as Strangers / Musafir.
• Earlier the Head of a village or town are only Host who offers Food, Shelter for Strangers
and there Horses or horse driven carriages.
• Slowly Slowly it takes a shape of a formal lodging and food service business.
• 6th Century BC…. “Inn” were into existence and are considered as foundation of Hotel
Industry. Several other formats of similar lodging houses in old days were- Taverns,
Chalets, Caravanserai, Sarai, Dharamshala etc…

Banquets.
• During Colonial Periods, British, French, Portuguese, Dutch spreads there culture, foods, life
style throughout the world where ever they develop there colonies, thus encourage Hotel
Industry worldwide with different Food Menu, Accommodation style, Dining Style, Banquet
formats and Luxuries for Guest who stay in Hotels, like – Swimming Pool, Bar, Pubs, Casino
etc…

• The word ‘Hotel’ was used in England in about 1760.
• Modern hotel industry starts with opening of CITY HOTEL in New York in 1794. It was start of
real growth in Modern Hotel Industry.
• In1897 Kempenski started there first hotel in Berlin, Germany by name of HOTEL BETRIEBS
AKTI ENGE SELL SCHAFT* … Today, there are 76 five star hotels under the Brand
Kempenski spread in 31 countries.
• In 1908, STATLER’S HOTEL, Buffalo, New York come up with a concept which focuses on
Business Travelers segment.
• Emergence of Hotel Chain by name of “The Statler”
• 1925 Hilton started its Hotel in Dallas, USA

• Dharamshala, Sarai, Chaupal of Panchayat, Choultrys, temples, Religious places are some of the
early lodging formats. Such places were provided by Rich Peoples, Rajas, Zamindaar, Sarpanch
of Villages, Mahant of Temples.
• Under ethics of “Atithi Devo Bhava”, the food and shelters are offered free.
• Musafirkhana and Sarai were developed uring Mughals.
• With entry of British in India, Sarai started converting into Inn and Hotels.
• In 1840 ‘PALLANJEE PESTONJEE’ started first Luxury Hotel in Bombay, followed by Aukland
Hotel, Calcutta(1843), Esplande Hotel, Calcutta (1871), and Taj Mahal Hotel Bombay (1903) by
Jamshet ji Nusserwanji Tata. Taj Hotel Bombay was the first hotel of international standard and
Repute, built by an Indian for Indians.
DEVELOPMENT OF HOTEL INDUSTRY IN
INDIA
• Before year 2000, the Hotels in India remain concentrated to few Destinations only.
• The major metropolitan cities of India, like- Mumbai, Delhi, Chennai. Bengaluru, Pune,
Kolkata, Hyderabad, Ahembadabad and Gurgaon which cater Business, Leisure and MICE
segment, are the few cities of India where only one can see the Developed Hotel Industry.
• Rest of the Tourist destination, the Business are largely depends on Leisure Travelers and
the seasons.
• Since 2003 onward Hotel spreads gradually to numerous small cities of India in a very
organized form and most of them are now a part of big Brands… With increase in
Commerce, Industrialization, and excellent Transportation, an emerging Business Travelers
and MICE giving a good amount of Revenue to Hotel Industry.

  • 12. HISTORY / DEVELOPMENT OF THE HOTEL INDUSTRY IN INDIA • Dharamshala, Sarai, Chaupal of Panchayat, Choultrys, temples, Religious places are some of the early lodging formats. Such places were provided by Rich Peoples, Rajas, Zamindaar, Sarpanch of Villages, Mahant of Temples. • Under ethics of “Atithi Devo Bhava”, the food and shelters are offered free. • Musafirkhana and Sarai were developed uring Mughals. • With entry of British in India, Sarai started converting into Inn and Hotels. • In 1840 ‘PALLANJEE PESTONJEE’ started first Luxury Hotel in Bombay, followed by Aukland Hotel, Calcutta(1843), Esplande Hotel, Calcutta (1871), and Taj Mahal Hotel Bombay (1903) by Jamshet ji Nusserwanji Tata. Taj Hotel Bombay was the first hotel of international standard and Repute, built by an Indian for Indians.

DEVELOPMENT OF HOTEL INDUSTRY IN INDIA • Before year 2000, the Hotels in India remain concentrated to few Destinations only. • The major metropolitan cities of India, like- Mumbai, Delhi, Chennai. Bengaluru, Pune, Kolkata, Hyderabad, Ahembadabad and Gurgaon which cater Business, Leisure and MICE segment, are the few cities of India where only one can see the Developed Hotel Industry. • Rest of the Tourist destination, the Business are largely depends on Leisure Travelers and the seasons. • Since 2003 onward Hotel spreads gradually to numerous small cities of India in a very organized form and most of them are now a part of big Brands… With increase in Commerce, Industrialization, and excellent Transportation, an emerging Business Travelers and MICE giving a good amount of Revenue to Hotel Industry.
