Le sol est essentiel à la culture d'aliments sains et riches en nutriments. On estime que 95% de notre alimentation est directement ou indirectement produite sur nos sols.
Mais dans de nombreux pays, la production agricole intensive a appauvri les sols. Le Rodale Institute a enregistré une baisse allant jusqu'à 38 % des nutriments des fruits et légumes avec une baisse de 50 % des concentrations de protéines dans les céréales.
Lorsque le sol est exploité pour la production agricole sans restaurer la matière organique et la teneur en nutriments, les cycles des nutriments sont rompus, la fertilité du sol diminue ainsi que la valeur nutritionnelle des aliments.
Les pratiques agricoles régénératives augmentent les populations microbiennes bénéfiques près de la surface du sol où les plantes poussent. Les racines des plantes abritent une grande diversité de micro-organismes, dont des bactéries et des champignons. Ils vivent autour des racines ou à l’intérieur. Constituant une partie du microbiote du sol, ils agissent directement sur la bonne santé des plantes. Le réseautage communautaire fourni par les champignons mycorhiziens s'avère être la véritable base de la résilience des écosystèmes.

we term ‘regenerative organic agriculture”' (Rodale Institute, 2014).
